5 Easy Sheet Pan Meals

A round up of my favorite, super simple and nourishing, sheet pan meals! I love a good tray bake like the recipes below. They’re easy to make, you can play around with them based on what you have on hand, and they definitely make healthy food less boring!

For each recipe, I gave a quick handful of easy substitutions you can make.

These are all gluten free, with some paleo options and 1 vegan option. These meals may be simple, but they are not short on flavor. I genuinely enjoy making and eating one of these dishes basically once a week! I can’t wait to hear which one is your fave 🙂

Paleo Buffalo Chicken and Cauliflower

Don’t have cauliflower? You can sub broccoli, brussel sprouts, or any type of potato. If you sub potatoes, they will need to cook a little longer, so let them cook for about 10-15 minutes before adding the chicken!

Vegan Chickpea, Sweet Potato, + Cauliflower Bake


Sub any kind of potato you have on hand! Sub broccoli or brussels for the cauliflower, if that’s what you’ve got!

Green Goddess Chicken and Veggies


Sub any type of potato here. This meal is still delicious without the sauce if you don’t have the ingredients, but if you do it adds an amazing flavor!

Paleo Chicken Nuggets and Cauliflower
