Paleo Strawberry Shortcake Cupcakes

Hello cutest cupcakes ever! These strawberry shortcake cupcakes are grain free AND nut free- and beyond delish!!

Talk about nostalgia! These cupcakes brought me straight back to childhood. My mom used to make us strawberry shortcake all the time and it was the best little dessert 🙂 One bite of these and I felt like I was eating that childhood dessert all over agin!

These cupcakes are super simple and SO perfect! The cool whip topping is essential (I used a coconut based cool whip)- it’s what really gives it that shortcake vibe!

All you need for these cupcakes:

  • Butter (I prefer to always use grass fed)
  • Eggs
  • Honey
  • Milk of choice
  • Vanilla
  • Coconut flour
  • Sea salt
  • Baking powder
  • Fresh Strawberries

So simple! And seriously so delicious. You guys are going to absolutely love these!
