Simple one pan meal! Loaded with potatoes, Brussel sprouts, carrots, and chicken sausage- smothered in an addicting honey mustard sauce!
- 1 lb baby potatoes, quartered
- 1 lb Brussels sprouts, stems removed and halved
- 2 large carrots, diced
- 4–6 chicken sausages (precooked; I like Cajun or Italian flavor), sliced
- 2 tbsp of avocado oil
- 3 tbsp olive oil
- 1 garlic clove, crushed or minced
- 1 tbsp apple cider vinegar
- 1–2 tsp honey
- 1–2 tsp mustard (I like the grainy type for this, but dijon works, too)
- 1 tsp Italian seasoning
- 3/4 tsp sea salt
- 1/4 tsp black pepper
- Red pepper flakes (optional)
- Preheat oven to 425°F. Toss veggies and chicken sausage in a large bowl with 2 tbsp avocado oil and 1/2 tsp sea salt. Make sure everything is well coated.
- Bake on a large baking sheet for 25-30 minutes, tossing halfway through. While baking, whisk together olive oil, honey, mustard, garlic, apple cider vinegar, Italian seasoning red pepper flakes, and 1/4 tsp salt and 1/4 tsp pepper.
- When veggies and chicken sausage are done roasting, toss with the honey mustard sauce in a large bowl.
Such an easy meal prep! And so tasty. Count me in on anything with chicken sausage 🙂
I made this last night to meal prep for the week and it was SO EASY and so tasty — we loved it!!
Such an easy and hardy meal for any night–I love!
So easy to prep and has all simple ingredients you probably already have laying around the house! Also SO good!!!
Did you use pre-cooked chicken sausage or raw? Thank you; can’t wait to make this recipe!
Hi Lauren! Pre-cooked 🙂 I just updated the recipe! xo
Love this for a great weeknight dinner. Prepped some of the vegetables in the morning and then threw it together that evening. Big hit.
SERIOUSLY – one of my favorite dishes I’ve made from a blog to date. You killed it with this one. I loved it so much I made twice this week and ate for dinner and lunch.
Wow thank you so much Colleen!! That makes me so happy 🙂 So glad you love this one- it’s my fave meal prep recipe!
Healthy, easy, and so flavorful!
Love hearing that 🙂 Thank you!! xo
What is the 1tsp Italian seasoning for?!
Oops just updated the instructions- it gets added to the honey mustard sauce 🙂
Love this super simple yummy recipe as a weekly staple!
Great recipe for the end of the week to use up any leftover veggies you might still have on hand before they go bad!
This is my favorite go to recipe! I love having the ability to swap out whatever veggies and sausage I’m in the mood for or have on hand, and it’s delicious every time! Effortless and amazing!
I made this last night & ate it again as leftovers tonight, which were also delicious. This was such a good way for me to get in more veggies. I used sweet potatoes instead and added onion. Also didn’t have italian seasoning, and I was happy with the sauce without out too.
Such an easy an flavorful meal! Makes great leftovers as well!
Yay!! Thank you Jess xo
Get lost in the sauce!!! Mia loves her sauces and takes the most simple ingredients and adds a sauce to take it up a notch. This is an easy meal prep dish that I make for lunches/dinners.
Our family makes this recipe at least once every other week! This recipe is so delicious and easy to throw together. All of the ingredients are staples that we always have on hand and it is a crowd-pleaser. I highly recommend everyone try making this recipe. It is foolproof and everyone will love it.
Thanks Jackie!! Hoping the 1 star was an accident then 😉 hehe- so glad you love it!

Huge hit – super easy to put together and delicious
I thought I already left a review but I guess I didn’t!! I’ve made this recipe now more than I can count – just made it again last night. It’s the easiest and best meal to make for large groups!! It’s literally always a hit. Never fails. Or make enough for a large group and eat it all yourself, it’s that good 🙂 I always add extra sausage and the best part about this recipe is that you can easily make it your own by adding or removing any veggies you want!
I make this at LEAST once a month. Unbelievably tasty and SUPER easy, very little clean up. I have forwarded this recipe to many who now continue to make it for their families.
Tip: use one big serving bowl to coat veggies/sausage, then use that same bowl to make the sauce, then dump from pan directly into the bowl with the sauce.
Obsessed!!! This is now a staple. So fast, healthy, and delicious.
Super easy to prep and throw into the oven. My fiancé and I rarely have any leftovers!
So glad- thank you so much Alyse!
Just made this again tonight, forgot how good it is! Subbed broccoli for the Brussels because that’s what I had. So so easy and delicious!!
Trying tonight! What do you serve with it – or just eat alone?
Usually a big salad! Or some rice!
One of my absolute favorite recipes! Seriously on a weekly rotation with my family. I love how customizable it is with whatever veggies you have on hand. Such a fabulous flavor and leftovers are always so tasty (if we don’t demolish it the night before)
The perfect simple and delicious meal to prep for my lunches during the week! I have made it so many times that I have the recipe memorized!
Just realized I never commented on how AMAZING this recipe is. It’s so customizable to the veggies I can eat throughout my various stomach issues (low fodmap/SCD/keto) and the whole family and all of my friends have loved it. Thank you very much!!
Thank you so much for taking the time to leave this sweet review Hayley!! I’m so happy you love this one xo
The best meal to meal prep for lunches. I’ve made this recipe four times in the last month. It’s the best????
One of my all time favorites to make for meal prep!
