Chicken and Potatoes Skillet Dinner Recipe with Carrots, onion, garlic, and thyme In a skillet

Our current favorite one pan meal! This skillet chicken and potatoes is simmered in a mouth-watering white wine sauce. Plus, the smells that will fill your kitchen are unreal!

This dish is super simple to make. You just need a good 10-12 inch skillet (I love my cast iron or Always Pan for this). Everything will get cooked in this one skillet, for an incredibly easy and delish dinner!

It’s the perfect weeknight dinner- full of flavor and leaves your house smelling like heaven! The creamy white wine sauce is honestly so dreamy- and SO easy to make! Plus, it can be made dairy free!

I love to serve this with an extra side of roasted veggies, like asparagus or broccoli, to add some extra nutrients to the meal!

This meal is a great balance of protein, healthy fats, and complex carbohydrates.

Be sure to read the notes in the directions, as I’ve given some dairy free alternatives! I’m personally not intolerant to dairy, and I love this with the butter and cream as is (plus, it’s a small amount). But, if you need some substitutions then I’ve got you covered!

For dairy free, I like to use Nut Pods plain dairy free creamer in place of the heavy cream. It works like a charm!

This is one of those meals that I so often get messages from followers saying it helped their dad, boyfriend, husband, or. sibling eat healthier! It’s a great comfort food meal (who doesn’t love perfectly cooked potatoes?), has a great savory flavor, and it’s filling while not being too heavy.

It’s just a staple weeknight meal. We also love this on the weekend with a nice glass of wine 🙂 It never gets old- I could make this recipe truly every week!!

Creamy Skillet Chicken and Potatoes

Ingredients

Scale
  • Olive oil, for the pan
  • 68 chicken thighs, boneless and skinless
  • 2 tbsp butter (vegan butter for dairy free)
  • 1/3 cup diced onion
  • 34 garlic cloves, minced
  • 4 large carrots, roughly chopped
  • 6 small-medium yellow or red potatoes (this was just under 1 lb for me), cubed 
  • 1/3 cup dry white wine
  • 3/4 cup veggie or chicken broth
  • 1/4 cup heavy cream (for dairy free, sub a PLAIN unsweetened dairy free creamer)
  • 1 tbsp tapioca or arrowroot starch
  • 1 tsp Italian seasoning
  • 45 sprigs of fresh thyme, stems removed 
  • Sea salt and pepper, to taste
  • Juice of 1/2 lemon

Instructions

  1. Season the chicken thighs well with salt and pepper. Heat a 10-12 inch cast iron skillet over medium hear and grease with olive oil. Once hot, add the chicken thighs and cook for 6-7 minutes per side, until cooked through. Set aside on a plate or cutting board.
  2. Add the 2 tbsp of butter to the pan. Once melted, slightly reduce heat and add onion, garlic, carrots, and potatoes. Season with salt and pepper and give everything a good stir to coat. Allow to cook, stirring occasionally, for 5 minutes. While cooking, roughly chop the chicken thighs into more bite-sized pieces.
  3. Add the wine and allow to cook down for 2 minutes, then stir in the broth, heavy cream, and tapioca starch. Stir until the tapioca starch is mixed in well. 
  4. Add the chicken thigh pieces back to the pan along with the Italian seasoning and thyme leaves. Stir everything well, then reduce heat to a low simmer. Cover the pan with a lid for 20-25 minutes, until veggies are fork tender. Squeeze lemon juice over everything and serve!

    I made this last night for my family and we absolutely loved it. Usually I have to trick my dad into eating healthier things by not telling him hat I’m making for him, and after dinner last night he told me I needed to make this a regular meal for us! I added more potatoes and carrots and used chicken breast’s because tbh we are not a chicken thighs family. So I added more cream, wine, and vegetable broth to make sure it was all covered and it was perfect! and the lemon juice at the end is a simple but completely necessary touch! really brought all the flavors together. Okay this review has become novel-like but Mia’s recipes are great and not one has ever let me or my family down (and we are a picky bunch)!

    For other readers – I used 2 tbsp gluten free all purpose flour in substitute of the tapioca / arrowroot and it worked perfectly. I also used half & half and chicken breasts as it’s what we had. So delicious, so simple. Two of us polished it off ????

    I will say my 10 1/4 inch skillet was a little tight on space so I had to simmer about 2x as long. Will use my larger skillet next time!

    Made this for lunch because I knew I’d be having a more indulgent dinner and wanted to pack some veggies in, while still staying full enough not to snack before dinner time! This dish did not disappoint. It was flavorful, filling and nutritious. I scaled the recipe down to 1 serving and did not have any issues. Same cook time, etc. I also added some roasted cauliflower I needed to use up. I did omit the wine and use plain, unsweetened almond milk instead of cream, but I still felt the dish was plenty saucy/creamy. Will definitely make again!

    I made this recipe last night and it was so good! I didn’t have any wine or starch but it turned out lovely. I had an extra chicken breast that I threw in with the thighs and it was great. I ate it for leftovers this afternoon and it was just as good the next day.

    I think I cut the potatoes a bit too big, they took a while to cook down, but thats my fault!

    So good and will for sure be making it again!

    I love eating hearty but healthy meals and this one takes the cake! My partner is a picky eater and absolutely loves this meal as well, so we will definitely be making again. My favorite part is the ingredients are easily found in my pantry and hearty, like a winter stew, but the lemon and wine subtlety really makes a winter stew feel more all-season fresh and light.
