Gluten free crispy orange salmon and cauliflower tray bake! Crispy salmon bites and perfectly roasted cauliflower with the most delicious (and simple!) orange glaze sauce.

This recipe is about to be one of your new favorites, especially if you love the orange cashew chicken and/or orange cashew tofu from the blog! This sauce/process is a bit different from those recipes, but just as addicting and easy to make!

The crispy salmon bites and cauliflower all get roasted together in the oven on one pan, making the cooking process super simple and with minimal clean up!

The orange glaze sauce is made with a handful of simple ingredients that get quickly simmered on the stovetop to create a sticky, sweet, and tangy sauce to pour over the final product. It’s an addicting sauce that you’ll want to put on everything! 🙂

Plus, this easy dinner recipe is gluten free and dairy free. If you don’t require gluten free, you can easily sub regular bread crumbs and soy sauce, though!

Serve this orange glazed salmon and cauliflower over a bed of rice, plus some cucumber or any fresh vegetables you love. It makes the most delicious and healthy Asian-inspired bowls!

Description

Crispy salmon bites + roasted cauliflower tray bake with a simple orange glaze!

Ingredients

Scale

For the Salmon and Cauliflower:

  • 1 lb salmon, skin removed and cubed
  • 1/4 cup bread crumbs (gluten free if needed)
  • 1 tbsp tamari (or sub soy sauce)
  • 1 tbsp tapioca starch (or sub corn starch)
  • 1/2 lb cauliflower florets
  • Salt and pepper, to taste
  • Olive oil

For the Orange Sauce:

  • 1 cup Florida Orange Juice
  • 1/4 cup tamari (or sub soy sauce if gluten free isn’t needed)
  • 1 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp olive or avocado oil
  • 1 tbsp sriracha
  • 2 cloves of garlic, minced
  • 2 tsp fresh minced ginger
  • Optional: red pepper flakes

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed salmon with the bread crumbs, tamari, and starch. Stir until evenly coated.
  3. Spread salmon out on half of the baking sheet, leaving room between each piece. Spread cauliflower out on the other half and season with salt and pepper. Drizzle everything with olive oil; stir cauliflower to coat.
  4. Bake for 20-30 minutes, until salmon cubes are crispy and cauliflower is cooked to your preference.
  5. Meanwhile, make your orange sauce. Combine all ingredients in a small saucepan and bring to a simmer over medium heat. Reduce heat and allow to simmer until thickened, about 3-5 minutes.
  6. Pour sauce over salmon and cauliflower just before serving and enjoy!

Delicious recipe! I’ve made it twice in the last week. My sauce didn’t thicken either but I liked that it was light for the pop of orange
