Gluten free and dairy free broccoli chicken meatballs- super simple addition to any weeknight dinner.

These meatballs are packed with broccoli for a nutrient boost. I’m all about sneaking in those extra veggies!

Such a delicious and filling lean protein source. When using animal products, I try to always opt for organic. It’s better for our own health, as well as the environment.

These meatballs go perfectly with any of your favorite noodles or noodle substitutes, and whatever sauce your heart desires! Pro tip: would be perfect with my creamy vegan tomato sauce, linked here.

This recipe is gluten free, dairy free, and easy to make. I try to keep things as simple as possible in the kitchen, while still finding ways to increase the nutrient-density of my meals.

Broccoli is one of my favorite veggies to add to any dish. It has wonderful anti-inflammatory benefits, as well as the ability to help prevent cancer. Cruciferous veggies (broccoli, cauliflower, kale, cabbage) are also great for hormonal balance. Powerhouse ingredients!

These meatballs are perfect for some easy meal prep. Toss them with pasta, veggie noodles, or even in a salad. I can’t wait to hear how you guys are enjoying these :)!

Broccoli Chicken Meatballs

Description

Simple broccoli chicken meatballs.


Ingredients

Scale
  • 2 tbsp olive oil
  • 2 cups of broccoli florets, very finely diced
  • 1 lb ground chicken, organic if possible
  • 1 egg
  • 1/4 cup almond flour
  • 1 tbsp nutritional yeast (optional)
  • 1 tsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Dash of black pepper
  • Pinch of red pepper flakes

Instructions

  1. Preheat oven to 400°F and prepare a large baking sheet with parchment paper or a silicone mat. 
  2. Dice the broccoli very finely. Heat a large pan over medium heat, then add the olive oil and broccoli. Cook for 2-3 minutes, stirring occasionally, until just soft and bright green. Set aside to cool.
  3. Add remaining ingredients to a large bowl, then add broccoli after letting it cool. Use clean hands to combine all of the meatball ingredients- be sure to mix well so seasonings get evenly mixed.
  4. Form into 15-16 meatballs and line them up on the parchment-lined baking sheet. Bake for 28-30 minutes, until cooked through and tops are slightly browned.
