The creamiest coconut milk turmeric rice, made with warming anti-inflammatory spices and healthy fats! My new favorite side dish. Just wow- I have no way of explaining how delicious (and easy!) this rice is.

There’s no doubt that a diet with lots of anti-inflammatory aspects is beneficial to our health. Inflammation shows up in SO many different ways- from painful periods, to chronic illness, digestive issues, acne, etc. The list goes on!

Turmeric is spice known for its anti-inflammatory properties, when consumed in combination with black pepper. It also adds a really delicious flavor to this creamy rice!

This rice also contains healthy fats from olive oil and coconut milk. Yes, the fats found in coconut are healthy fats and not to be feared! The coconut milk gives this rice the most amazing creamy texture- with a subtle coconut flavor.

This rice dish is reminiscent of a curry dish, but a little more subtle on the flavors (and super easy to make).

It’s packed with green goodness, too- using baby bok choy and baby spinach. Tons of vitamins and minerals in this dish!

This make’s for the most amazing meal prep side dish, or simple dinner side. I love this with some salmon, shrimp, or tofu. SO good!

Important Tips:

  • It’s important to follow the instructions on the package for the specific rice that you use. I replaced the usual water that I would cook rice in with vegetable broth in this recipe; it adds an extra delicious flavor and I don’t recommend skipping it for water!
  • I have only tried this with white Jasmine rice, and I can’t say for sure what results you will get when using a different rice
  • Be sure to use a can of full fat coconut milk, not light or from the carton

Anti-Inflammatory Creamy Coconut Rice

Description

Golden creamy coconut rice, made with healthy fats and warming spices!


Ingredients

Scale
  • 1 1/2 cups uncooked white jasmine rice*
  • 2 1/4 cup low sodium vegetable broth
  • 1 tbsp olive oil
  • 1/4 cup shallot, finely diced 
  • 2 cloves of garlic, minced 
  • 2 cups roughly chopped baby bok choy (for me, this was 1 bunch)
  • 2 cups baby spinach
  • 1 tsp ground turmeric
  • 1/2 tsp sea salt, more to taste
  • 1/4 tsp black pepper
  • 1 (14 oz) can full fat coconut milk (both watery and creamy parts)
  • 23 green onions, diced

Instructions

  1. Start by cooking the rice. Stir the rice with the vegetable broth in a pot and cook according to directions on the box . (For mine, I had to bring to a boil then cover and simmer for 15 minutes. I then removed from heat and allows to steam for an additional 10 minutes). 
  2. Prepare the other ingredients.
  3. Heat a large pan with high sides over medium heat.
  4. Pour in the olive oil, then slightly reduce heat and stir in the shallot and garlic and cook until fragrant, about 30 seconds (be careful not to burn), then stir in bok choy, spinach, and all of the seasonings. Cook for 2 minutes, stirring occasionally. 
  5. Reduce heat and pour in coconut milk (use the entire can- including the water). Stir and allow to simmer with the vegetables for 5 minutes. Turn off heat, and stir in rice once it is done cooking.
  6. Stir in green onion and serve!

Notes

* I have not tried this with any other type of rice. Liquids may need to be adjusted for different types of rice.

    I just made this and holy crap it was amazing!! My family doesn’t like garlic or onions, so I was a little worried it would be pretty bland with no other real flavour besides coconut but it was still super good!! I also used brown rice and it was very good. Just followed the instructions on the rice package and didn’t have to change anything else in the recipe. I definitely recommend you try this ????????

    I made the following changes: used coconut cream, added more shallots, added a little more tumeric, and a splash of lemon juice at the end. Served it with a spinach salad with avacado and tomatoes, with a homemade french dijon vinaigrette. It was delicous!

      Food is really person to person! If something causes an inflammatory response in someone that’s different, but in general jasmine rice can definitely be part of a healthy diet and I tend to find that a fear of rice comes from diet culture!

    My fiance and I love this dish! We added this to our weekly rotation and I do not regret it at all! Ive made it with both brown and white rice, and you cannot go wrong with either! It makes well more than enough leftovers for the week which makes lunches easy! It also reheats well! I even made this for my fiance’s family and it was a hit with them as well!

    Yum! Easy, and a great comfort food when sick! I didn’t have bok choy at home so I just added more spinach, but I like bok choy so will have to try it with the boy choy next time.

    I love this rice dish ???? my family has added chicken, shrimp, and salmon but I find that I’m satisfied just eating this dish as a main course! It’s so nourishing and makes great leftovers. Love everything on this site!

    Love this recipe! I always add a bunch of different seasonings (specifically lots of spicy seasonings) and other vegetables such as zucchini, mushrooms, bell pepper, carrots, broccoli, etc and it’s wonderful! I have made this a few times and am impressed every time.

    I have had this recipe saved forever after seeing it on TikTok and I finally got to making it! I am not great in the kitchen but this was very straightforward and absolutely delicious! I added chicken to it and am already looking forward to eating the leftovers tomorrow.

    My extended family loves this meal! I even made it for Thanksgiving this year! The only thing I do different is I make everything in one pot- adding the rice and broth after the shallot and garlic have warmed a little. I went through and read some comments though so I may experiment a bit in the future. This is definitely an easy staple!

    This was so freaking delicious! I used spinach, asparagus and frozen peas because that’s the veggies I had and needed to use up! I added garam masala and cumin for a little kick and it was a delicious addition to add a little extra flare. My husband wanted a little more spicy and added a dash of Cajun to his bowl and LOVED it

    This was delicious! I didn’t have bok choy so I just used spinach. I mixed jasmine rice with farro since that’s all I had. I served it with curried chicken. Will definitely make this again!
