Olive oil adds a rich, smooth flavor to baked goods. It might sound strange to some, but olive oil + chocolate are really delicious together. Plus, it’s a healthy fat packed with omega-3’s.

High quality, healthy fats are so important in a healthy diet. I pay close attention to the fats I consume- even in baked goods/desserts! Olive oil is a long standing favorite of mine (yes i am very Italian and olive oil basically runs through my veins- but it’s also loaded with health benefits :).

I can’t believe the way these cookies turned out- the texture and taste is out of this world good. They taste like a thick and chewy bakery style cookie- but made with real and wholesome ingredients. free of grains, refined sugars, and made with healthy fats. Homemade is always best!

P.S. I recently made these into “monster cookies” using chocolate gems and they were DELICIOUS! So you can really use any type of baking chocolate you have on hand 🙂

Grain Free Olive Oil Chocolate Chip Cookies

Description

The best thick, gooey, dense chocolate chip cookies made without any grains or refined sugars. They are gluten free, paleo friendly, and insanely delicious! 


Ingredients

Scale
  • 1/2 cup olive oil
  • 3/4 cup coconut sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 + 3/4 cups almond flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 3/4 cup chopped dark chocolate or chocolate chips

Instructions

1. Preheat oven to 350°F and line a large baking sheet with parchment paper.
2. Whisk olive oil, egg, coconut sugar, and vanilla together until smooth. 
3. Stir in the dry ingredients until everything is well combined, then fold in chocolate chips. 
4. Scoop dough out into about 1.5 tbsp sized balls- roll with your hands to make them smooth. leave room between each cookie for them to spread while baking. 
5. Bake for 11-12 minutes. allow to cool before serving or cookies will be fragile.


Notes

-I have not tested these cookies with any other flour substitutions. For best results, I recommend keeping the recipe as is!

    These are super tasty!! I made them the first time as-directed and really enjoyed them. Today I made them with coconut flour instead (just bc almond flour was so expensive). Still tasty, but the almond flour is definitely better. These are loosely the adjustments I made since coconut flour is much more absorbent!

    – Instead of almond flour, 1 cup of coconut flour
    – Use 4 eggs TOTAL so add an extra egg
    – Add a *little* more sugar than originally directed (maybe like 1/8 a cup? just to taste)

    Again; the almond flour tastes much better, but in case you want to try coconut for whatever reason that’s what worked for me!

    AMAZING! I’ve been baking a lot with almond flour for Passover and these were SO good. I substituted canola oil for olive oil (a bit shy that my taste testers would find olive oil too strong) and did half white sugar / half brown sugar.     I made these cookies with regular refined sugar and mini semi-sweet chocolate chips and they were amazing! I’m amazed at how easy they were to make! I love them with the almond flour since it comes with such a great texture.

    My recommendation would be to take them out at the 11 minute mark, even if you think they are underdone. The first time I was afraid they were too wobbly but they definitely settled after they cooled, and I ended up slightly burning. mine on top. But still very delicious!

    These were delicious, simple, and guilt-free. And the recipe yielded SO many cookies! I love olive oil, so I was instantly drawn to this recipe.
    I ended up baking them much longer than the recipe called for, as the cookies weren’t spreading like I was expecting from pictures. I think that I needed to smush them down a bit on the cookie sheet as opposed to having them in balls when going into the oven! Also, after some research, I learned that all almond flours aren’t created equal, so I think perhaps my almond flour had something to do with the spreading as well! Will be trying again soon 🙂

    These cookies were easy to make. I would not rate them 5 stars however…I was skeptical about using baking soda as I find it always ruins the taste of baked goods, but I followed the recipe as directed. Unfortunately they don’t taste great with the baking soda. Can I use baking powder instead?
    They are also very oily so I will use less oil next time….

      Hi Carmen, I’m sorry you didn’t enjoy these. Most chocolate chip cookies use baking soda- it’s essential for them to bake properly. With only 1/2 tsp you really shouldn’t taste it at all! Baking powder will not work the same as the baking soda, so I don’t recommend it. They also shouldn’t be very oil. I’m not sure what happened there sorry to hear that!

    I’m confused… 3/4 cup chocolate chips was way more than I needed for the amount of batter this recipe made. Am I the only person who experienced this?

      Hi Gabby. I haven’t heard of anyone having this issue, I’m sorry! You do need to give it a minute for the chocolate chips to fold in. I like to use a rubber spatula for this, however the amount is correct!

    I have never commented on a recipe before, but I have to agree with the other commenters – this recipe was amazing! And so easy. My husband refused to eat my previous attempts at almond flour chocolate chip cookies, but he kept raving about this one. Really weird, actually. Why does this one work so well? Begs for further investigation and repeated cookie sampling, for the sake of science.

    Our son told us about these cookies and at first, my husband was VERY skeptical of a olive oil cookie! But what the heck?! These are so gosh darn good! We use Lilly’s chips (stevia I stood sugar) for a truly guilty (free) pleasure. 😋

    Truly my favorite cookie recipe ever!!! I’ve made them twice (back to back weeks) and am obsessed. Got my entire family hooked including my dad and brother who are big chocolate chip cookie guys and have a very high bar. When I told them the ingredients, they were amazed. So moist and chewy.

    I also feel great after eating them unlike other traditional cookies w butter, white sugar, white flour, etc. which upset my stomach. Thank you for this GEM!!! Xoxo

    I made these cookies about a month ago and my husband and I both love them! Did I miss the nutritional value section? I would love to know the calorie and carb count.

    Ok these are amazing and I make them a lot. However, I want people to know they these are not guilt free just because they don’t have sugar and flour. I did the nutrition and it’s about 375 calories per cookie. If you’re like me, you can easily eat 2 in one sitting! So just beware that these are grain free, but still very high calories.

      AMAZING cookies, but yes high in macros, I think it’s important for people to know:)
      First time making them and will make again! (I also calculated the macros, I love that the ingredients are clean! But will try to tweak a bit to try to lower the macros a bit).

    Second recipe for chocolate chip cookies I’ve tried. I can stop looking now! These are so good, but they didn’t spread so I had to flatten them before baking. I didn’t change anything in the recipe but I will add walnuts next time. Thank you so much.     CRAZY! Who knew!?! These are amazing! Came up about 1/4c short on almond flour so subbed oat flour. Used plant based dark chips and walnuts. After rolling a few balls of dough I ground some pink himalayan salt into a bowl and dipped the tops in it then baked. Put the rest of the dough balls in an airtight container in the fridge so I can bake a few fresh every few days. They don’t last past the week and the dough keeps just fine. I’ve tried making sooooo many “gluten free” choc chip cookies but my search is OVER! (*will play with applesauce vs oil, and monkfruit vs coconut sugar in smaller batches in the future to lower the fat and the calories even more and maybe dairy free chips and/or sugar free chips variety). THANK YOU!
