Gluten free and vegan apple snickerdoodle energy bites! Soft and delicious energy balls with crunchy bites of apple chips! Probably my favorite snack recipe to date.

I originally made this recipe for an Instagram Reel back in the Fall, and decided it was finally time to actually put them on the blog. I’m not sure why I waited this long, but they’re here! These little bites are SO. GOOD. You have to try them for yourself- they are my favorite energy bite recipe I have ever created!!

These energy bites are:

  • Gluten free (just be sure to use certified gluten free oats if needed!)
  • Vegan
  • Paleo
  • Refined sugar free
  • Simple + delicious

They are the best snack every to have in the refrigerator/freezer for a quick grab and go bite. The cinnamon, apples, and cashew butter combined give the most amazing flavor that honestly tastes like dessert!

The ingredients are super simple and the prep is quick an easy. You just need a food processor (or a powerful blender), a handful of ingredients, and you’re set!

These energy bites provide some healthy fats, plant-based protein, and fiber. The flavor makes them a super satisfying snack, too. Perfect for when that afternoon sweet tooth hits!

Apple Snickerdoodle Energy Bites

Description

Apple Snickerdoodle Energy Bites! A gluten free and vegan healthy snack that tastes like dessert!


Ingredients

Scale
  •  1 cup cinnamon apple chips, divided
  • 3/4 cup old fashion rolled oats
  • 2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1/4 cup honey or maple syrup
  • 1 cup cashew butter
  • Cinnamon sugar blend, for rolling

Instructions

  1. In a food processor (or a powerful blender), quickly pulse 1/2 cup of the apple chips into tiny bite-sized pieces, then set aside in a large bowl.
  2. Add your oats, remaining apple chips, cinnamon, and salt to your food processor or blender and blend into a flour.
  3. Add the vanilla extract, honey, and cashew butter. Blend or process until mostly combined (it doesn’t need to be 100% combined, as you will mix again by hand in the next step).
  4. Add your dough to your bowl with the apple pieces, and mix everything together until well-combined. Set in the fridge for 30 minutes.
  5. Roll dough into energy balls, making 13-16 balls depending on size, and roll each ball in a cinnamon sugar mixture. Store in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 2 months.

      I’m still waiting on a reply about this too, but I had another look at the broken link and the website graphics look like it’s just dried apple rings. I guess we could buy dried apple rings and add some extra cinnamon.
