Simple quinoa and avocado salad with a delicious lime dressing!

This light and healthy quinoa salad has so many nutrients and pretty colors packed in! It’s definitely an “eat the rainbow” sort of meal, and makes for the perfect simple meal or meal prep! The flavor combinations in this dish are just perfect, and it will leave you so satisfied while still being super light and fresh!

This yummy dish is made with:

  • Quinoa
  • Avocado
  • Feta
  • Black beans
  • Bell pepper
  • Corn
  • Tomatoes
  • Red onion

Plus some cilantro and the best simple lime dressing for the perfect bright flavor! It is SO good, and couldn’t be easier to throw together! I know you guys are going to love this veggie-forward dish ๐Ÿ™‚

Can I make this dairy free?

Sure! If you need this dish to be dairy free, simply use a vegan feta that you love! You can technically skip the feta, but I personally think it adds so much flavor to the dish so I wouldn’t recommend it! Other than that, the rest of the dish is naturally dairy free.

Can I meal prep this recipe?

Yes! I would just recommend leaving the avocado out until you’re ready to serve/enjoy the dish, as avocado browns very quickly. To keep everything super fresh, simply add the avocado cubes right before enjoying the dish! This quinoa salad will stay fresh in the refrigerator for up 3-4 days.

This recipe is so easy, packed with veggies, and full of flavor. It makes the BEST simple lunch, meal prep, or side dish. Feel free to add your protein of choice to make it a meal! I love serving this with salmon, chicken, diced hard boiled eggs for an easy lunch, or shrimp!

Quinoa Avocado Salad With A Simple Lime Dressing

Description

A bright and fresh quinoa avocado salad packed with veggies and finished with a simple and flavorful lime dressing!


Ingredients

Scale
  • 1 cup (cooked) quinoa
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup frozen corn (thawed)
  • 1/2 of a bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp red onion, diced
  • 1 tbsp cilantro, chopped (optional)
  • 1 avocado, cubed
  • 1/4 cup feta cheese

For the dressing

  • 1 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1/2 tsp honey
  • 1/4 tsp garlic powder
  • Salt + pepper, to taste
  • Optional: Splash of hot sauce for a spicy dressing

Instructions

  1. Cook quinoa according to package directions.
  2. In a large bowl, mix the cooked quinoa with the black beans, corn, bell pepper, tomatoes, red onion, and cilantro until mixed well.
  3. Add the dressing and toss well.
  4. Gently fold in the cubed avocado*, then sprinkle with the feta. Taste and add more salt + pepper if needed; serve and enjoy! Can be prepped ahead for up to 3 days (see note).

Notes

*If you are meal prepping this or hoping to enjoy leftovers the next day, I recommend not adding the avocado until ready to serve!
