My go-to healthy banana egg pancakes, made with just a handful of super simple ingredients. These could not be easier to make, and make the best healthy breakfast when you’re in the mood for something sweet!

These pancakes are gluten free, dairy free, nut free, and so simple. They make the best vehicle for topping with any fruit, yogurt, nut butter, etc. You can really make them your own, and use them as a simple base for a sweet but healthy breakfast!

The eggs make these pancakes higher in protein than an average serving of pancakes, and the banana adds the perfect natural sweetness! Plus, you can whip the batter up in a matter of minutes!

I absolutely love topping mine with a dollop of Greek yogurt, some fresh fruit, and a drizzle of pure maple syrup. This breakfast is so satisfying to me, and I still feel energized and focused after enjoying them. My kind of recipe!

This pancake recipe makes 1 serving, but the ingredients can easily be doubled or tripled to make more (or how ever meany servings you need)!

Easy and healthy banana egg pancakes!


Ingredients

Scale
  • 1 ripe banana, mashed
  • 2 eggs
  • 2 tbsp oat flour
  • 1/4 tsp baking powder
  • Pinch of sea salt
  • Dash of cinnamon (optional)
  • Butter or coconut oil, for the pan

Instructions

  1. Preheat your griddle or pan over medium heat with some butter or coconut oil.
  2. Whisk all ingredients together into a batter-like consistency. Pour onto your preheated griddle, cooking for a few minutes per side. Pancakes should be slightly browned and pretty easy to flip when they are ready. Serve with desired toppings and enjoy!
