Gluten free and dairy free Nutter Butters! A healthier spin on the classic peanut butter cookie sandwiches I was OBSESSED with growing up!

Get ready to make yourself a batch and grab a glass of almond or oat milk- these are about to be your new favorite treat!! They are so easy to make, and require only a handful of super simple ingredients. The final result is a perfect little peanut butter sandwich cookie that you won’t be able to get enough of!

Peanut butter cookies forever have my heart. Add in some delicious creamy peanut butter filling for a cookie sandwich and it is truly HEAVEN. These gluten free nutter butters are one of my favorite things I’ve made in a long time! They’re just so nostalgic and so delicious.

All you need for the cookie dough is:

  • Almond flour
  • Oat Flour
  • Coconut sugar
  • Baking Powder
  • Sea salt
  • Peanut butter
  • Maple syrup
  • Vanilla extract

All you have to do is make a super simple peanut butter dough. Making the cookie dough takes a matter of minutes, and once you make these once or twice you will honestly have it memorized for the most part!

Next, you’ll roll the dough into little cookie dough balls and stack two on top of each other (see photo above). Finally, take a fork and gently press each ball of dough down while making a checkered pattern on the cookies.

They get a quick 10 minute bake, then just need to cool a bit before spreading with the filling and sandwiching together! That’s it– so simple!

Can I make these with a different flour?

I know I sound like a broken record, but I never recommend replacing flours in a baking recipe unless it is noted as a possible substitute in the recipe. All baking recipes are such a science- changing out the oat or almond flour in the recipe will give you a different result, and I can’t guarantee it will work! I have only tested it this way, so for best results I always say keep the recipe as written! 🙂

Can I use a different nut butter?

Technically, yes. As long as you’re ok with them tasting different! Since peanut butter has such a distinct flavor, a different nut or seed butter will result in a different flavor cookie. I have only tested these with peanut butter, and for that classic Nutter Butter flavor I would say peanut butter is your best bet!

Gluten Free Nutter Butters

Description

A gluten free and dairy free remake of the childhood classic Nutter Butter peanut butter cookie sandwiches!


Ingredients

Scale
  • 1/2 cup almond flour
  • 1/4 cup + 1 tbsp oat flour
  • 2 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

For the filling

  • 1/4 cup peanut butter
  • 1 tbsp honey or maple syrup
  • Dash of sea salt

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together all of the cookie dough ingredients with a sturdy spatula until well combined.
  3. Roll the dough into small balls (no bigger than 1″), placing 2 balls of the cookie dough one on top of the other. (Alternatively, you can make individual cookies instead of stacking).
  4. Use a fork to press the dough down, making a checkered pattern.
  5. Bake for 10-11 minutes. Allow to cool for at least 15 minutes to set.
  6. Meanwhile, mix together the filling ingredients. Spread one cookie with some filling, then place another cookie on top to make a sandwich. Leftovers can be stored in an airtight container on the counter for up to 5 days.

    Tasted great and so quick and easy to make!
    Ended up with leftover cookie dough and didn’t feel like making another batch so I just rolled them up into ‘peaut butter balls’ and my toddler LOVED them!! Next time I’m definitely going to double the recipe just so I can have the dough balls along with the cookies!

    Also the filling makes GREAT dip for apple slices👍
