These fluffy and moist gluten free cinnamon applesauce pancakes are, hands down, my favorite pancakes I have ever made! The flavor and texture is absolutely perfect- and the recipe is so simple!

Before heading into Thanksgiving this week, I wanted to give you one final recipe to make for the family for Thanksgiving morning :). These pancakes are so perfect for cozy Fall and Winter mornings.

I love the addition of applesauce in these pancakes so much. Without having to chop or sauté any apples, you can that delicious cinnamon apple flavor, and it also adds the best moisture to the pancakes to keep them from drying out. Nobody likes a dry pancake!

These applesauce pancakes are:

  • Gluten free
  • Dairy free
  • Nut free
  • Soy free
  • Vegetarian

While the batter itself is dairy free- I do always prefer cooking my pancakes in some good butter! It adds the best extra flavor and crispness to the outside of the pancakes.

I love serving these with a sprinkle of powdered sugar, a pat of grass fed butter, and a good pour of maple syrup. I also think these would be delicious with some peanut butter or almond butter on top for a lower sugar topping option!

Either way, these are about to be your new favorite gluten free pancakes! They are SO delicious I cannot get over it!!

Flour substitutions:

In the recipe below, you will find some suggestions for which flour brands I recommend for gluten free.

It is important to not try to substitute the gluten free all purpose flour with something like almond flour, oat flour, or coconut flour. As with all baking, you will get a completely different end result! I definitely recommend keeping the recipe exact as written for best results!

However, if you don’t need these to be gluten free you can definitely replace the gluten free all purpose flour with regular all purpose flour!

Other than that, the recipe is super simple and straight-forward! The batter is so easy to whip up, and you can easily double or triple the recipe for a bigger group! The recipe as written serves 2-3 people (depending on what else you are serving them with), so be sure to plan accordingly depending on how many you are feeding!

Gluten Free Cinnamon Applesauce Pancakes

Ingredients

Scale
  • 1 cup gluten free all purpose flour (can sub regular AP flour if you don’t need gluten free)*
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1 cup unsweetened cinnamon applesauce
  • 1 large egg
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 24 tbsp milk of choice (regular or dairy free), as needed
  • Butter or coconut oil, for the pan

Instructions

  1. In a large bowl, whisk together your flour, baking powder, cinnamon, and sea salt.
  2. Mix in your applesauce, egg, coconut sugar, and vanilla extract until everything is well combined. Add your milk of choice as needed, until batter is still slightly thick but pourable.
  3. Allow batter to sit while you heat a skillet or pan over medium heat. Add butter or coconut oil to the griddle, then spoon out about 1/3 cup batter per pancake. Allow to cook for 2-4 minutes per side, until browned and edges start to dry. Serve with toppings of choice and enjoy!

Notes

Be sure to use a gluten free flour blend that contains xanthan gum. I recommend King Arthur, Bob’s Red Mill (the blue bag), or Cup-4-Cup. Substituting with something like almond or oat flour will not yield the same results!

    These were so delicious! I’m a vegan, so I substituted the egg for 1 flax egg. The recipe turned out delicious. I poured the pancake batter into a waffle iron, and they were super fluffy! These might be some of the best waffles I’ve ever had! The default recipe makes about 2 waffles, so I would recommend doubling it if you’re making waffles.

    I came across this recipe because I had some applesauce I didn’t want to go to waste and I was not expecting it to be this good. Probably going to become a staple pancake recipe in our family now. I’m going to experiment with subbing part of the flour with buckwheat flour just because I love the flavour of buckwheat pancakes.
