Easy Mediterranean Pasta Salad! Is there anything better than a good, fresh pasta salad in the Summer? This one is hands down my favorite to make!

I can’t believe I have never had a pasta salad recipe up on the blog! It’s one of the easiest Summer meals to make for a quick dinner, or to bring to a gathering. It’s so easy to pack it with lots of fresh veggies for a healthy option that is still so satisfying and delicious.

This dish is bright, fresh, flavorful, and nourishing. It checks all the boxes!

This Mediterranean Pasta Salad is made with:

  • Pasta (any you love- I prefer penne, bow tie, or spirals for a pasta salad)
  • Cucumber
  • Tomatoes (red, yellow, orange, or a mix of all 3!)
  • Olives
  • Arugula
  • Shallot or red onion
  • Feta
  • Vinaigrette

That’s it! A simple Summer dish that never disappoints and that everyone will devour!

Can this be made gluten free?

Yes- but be sure to use a gluten free pasta that you trust not to get too mushy or fall apart! I also find that gluten free pasta in this dish is best served fresh, as it can sometimes get a bit dry in the refrigerator.

Can this be made dairy free?

The feta in this pasta salad adds lots of flavor to this dish! To make this dairy free, I recommend subbing with a dairy free feta if you can get your hands on some!

Description

Easy 15 minute Mediterranean pasta salad packed with flavor and veggies!


Ingredients

Scale
  • 12 oz pasta of choice
  • 2 cups arugula
  • 1 cup cucumber, peeled and diced
  • 1 cup tomatoes, diced (for cherry tomatoes just slice in half)*
  • 1/2 cup sliced Kalamata olives
  • 1/4 cup thinly sliced shallot (can sub red onion)
  • 45 oz of feta cheese
  • 1/2 cup vinaigrette (use any store bought or homemade dressing you love!)
  • Black pepper

Instructions

  1. Cook pasta according to package directions. Drain and immediately rinse with cold water.
  2. Add all veggies and the drained pasta to a large mixing bowl. Add feta and vinaigrette and give everything a good stir. Top with fresh cracked black pepper, serve, and enjoy!

Notes

*I used yellow tomatoes for mine, but feel free to use red, yellow, orange, or a mix of all 3!
