A delicious, easy, flavorful one pan dinner! This creamy Italian sausage and potato skillet packs in lots of protein, vegetables, and has the most amazing flavors. This is, hands down, one of my new go-to dinner recipes!
Once I made this a couple times, I honestly could just whip it up without even following the recipe- it’s that simple and straight-forward!
All you need for this healthy dinner recipe is:
Italian sausage (pork or chicken will work)
Bell pepper
Onion
Olive oil (or sub butter)
Potatoes
Broth
Heavy cream
Spinach
Parmesan
Plus a few simple seasonings and that’s it!
This one pan skillet dinner is:
Gluten free
Grain free
Soy free
Egg free
Nut free
Plus, it’s high in protein for a filling and satisfying dish. You can serve it on it’s own, or add an extra side of veggies. I served this with a side of roasted broccoli and it was perfect!

Skillet dinner with Italian sausage, potatoes, spinach, peppers, and a simple creamy sauce!
Ingredients
Scale
2 tbsp olive oil (or butter)
1/2 of an onion, diced
1 large bell pepper, diced
1 lb ground Italian sausage (chicken or pork)
1 tbsp tomato paste
1 tsp Italian seasoning
Pinch of red pepper flakes
1/2 lb baby gold potatoes, quartered
Salt and pepper, to taste
1 cup low sodium veggie or chicken broth
1/2 cup heavy cream
1 cup baby spinach
1/4 cup parmesan, or more to taste
Instructions
Sauté onions and peppers in olive oil for 4-5 minutes.
Add Italian sausage; cook, breaking up, until no longer pink. Stir in potatoes, tomato paste, Italian seasoning, red pepper flakes, and salt + pepper. Let cook for 1 minute.
Pour in broth and heavy cream. Cover pan with lid and simmer for 15-20 minutes, until potatoes are fork-tender.
Turn off heat and stir in parmesan and baby spinach.

Another amazing recipe!!! Every recipe I try from gathered nutrition is perfect and this one is so so good. I made it and added orzo and a little splash of Raos and it is perfection!! Thank you for this recipe- this is going to be a weekly staple
This was SO yummy! My kids devoured it and there was none leftover! I doubled the potatoes and added diced zucchini. Will add diced carrots next time too. I also used a couple spoonfuls of pasta sauce instead of tomato paste since I had an open jar in the fridge. Creamy and spicy!
So glad I found this recipe!! I made it without spinach and added mushrooms instead, also added paprika in there. Instead of breaking up the sausage, I cut mine up (personal preference). Husband enjoyed it also, making it again today but with chicken! I like dipping sourdough bread in the broth because it is simply delicious.
Chock full of flavor with little effort! I’m pleased with how easy this came together. I swapped out frozen cauliflower flowers for the potatoes. This cut down the cooking time by about 10 minutes. Added some fresh ground pepper at the end. No salt needed! Thanks!
Very Delicious. The potatoes absorb most of the cream and makes it very rich and flavorful. I did substitute mushrooms for the peppers and added corn at the end. We will definitely be making this again.
Very tasty! I didn’t have heavy cream on hand so I used a couple tablespoons of sour cream instead. I also tried adding some home canned tomato juice to make into more of a soup.
