Creamy Italian Sausage + Potato Skillet

Skillet dinner with Italian sausage, potatoes, spinach, peppers, and a simple creamy sauce!


  • 2 tbsp olive oil (or butter)
  • 1/2 of an onion, diced
  • 1 large bell pepper, diced
  • 1 lb ground Italian sausage (chicken or pork)
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • 1/2 lb baby gold potatoes, quartered
  • Salt and pepper, to taste
  • 1 cup low sodium veggie or chicken broth
  • 1/2 cup heavy cream
  • 1 cup baby spinach
  • 1/4 cup parmesan, or more to taste


  1. Sauté onions and peppers in olive oil for 4-5 minutes.
  2. Add Italian sausage; cook, breaking up, until no longer pink. Stir in potatoes, tomato paste, Italian seasoning, red pepper flakes, and salt + pepper. Let cook for 1 minute.
  3. Pour in broth and heavy cream. Cover pan with lid and simmer for 15-20 minutes, until potatoes are fork-tender.
  4. Turn off heat and stir in parmesan and baby spinach.
