The best every crispy crunchy parmesan carrot fries! In other words, your new favorite way to eat your veggies :).
These carrot fries are the best side dish EVER for a fun and delicious addition to dinner. When I made these for the first time, Blake and I literally could not stop eating them haha! They are so crispy, crunchy, flavorful, and full of nutrients to top it all off. I am so excited to share this new veggie-forward recipe with you all!
These carrot fries are easy to make, and don’t require any tricky ingredients at all. All you need to make these is:
Carrots
Avocado oil
Parmesan
Garlic
Salt + pepper
That’s it!! Plus some red pepper flakes if you like a little kick of heat like I do :). I also topped mine with extra parmesan and some fresh parsley for a pop of color- but that’s totally optional and not necessary!
I truly think I could eat these carrot fries every day. They remind me of something I would get at a restaurant…not to toot my own horn! They just come out perfectly crispy and with soo much flavor (is there anything better than garlic + parmesan??).
They also happen to be gluten free and grain free! They get all of their crunch from the parmesan and getting baked at a high temp in avocado oil. As long as you give each carrot some space on the tray and follow the measurements for the recipe, they will crisp up perfectly!
What should I serve these with?
Any dip you love! I mixed some pesto with a little plain Greek yogurt and it made the best dip for these! They would also be amazing with this lemon yogurt dip or a cheese dip :).

The BEST crispy carrot fries for a healthy and easy side dish!
Ingredients
Scale
1 lb large carrots, peeled and cut into fries
3 tbsp avocado oil
1/3 cup grated parmesan cheese
4 cloves of garlic, minced
Salt + pepper, to taste
Optional: red pepper flakes, to taste
Instructions
Preheat oven to 400°F and line a large baking sheet with parchment paper.
Be sure to cut your carrot “fries” into uniform sizes so that they cook evenly. In a large bowl, mix the carrot fries with all of the other ingredients until well-coated.
Lay carrots out on a single layer on your baking sheet. Be sure to leave room between each carrot to allow them to crisp up!
Bake for 25-30 minutes, until cooked to your liking. Serve with dip of choice and enjoy!

Love these as a snack! Hard to believe they are carrots. I sometimes buy the bigger carrot sticks and use those instead of cutting carrots into fries.
