The most perfect Summer salad! This salad combined strawberries, avocado, cucumber, feta, honey balsamic vinaigrette, and crunchy salted honey walnuts for the most amazingly delicious salad EVER!

This salad is packed with so much flavor, texture, and nutrients. I could eat this weekly and never get sick of it- it’s just so good!

The crunchy walnuts are by far the best part. They only take about 5 minutes to make, too! They get cooked in some butter and honey, then sprinkled with flakey sea salt while they cool into th emost perfect crunchy little bites. They are addicting and the best addition to this Summery salad!

This salad is best when strawberries are in season and sweet + juicy! I also recommend using avocados that are ripe but still firm to avoid them getting mushy in the salad!

Can I prep any of this ahead of time?

Yes! The walnuts and dressing can be made up to 3 days before. This will save you time when prepping the salad- all you’ll need to do is chop the fruits and veggies! I recommend waiting to prep the rest of the salad ingredients until ready to toss and serve!

The best Summer Salad with strawberries, avocado, feta, and honey salted crunchy walnuts!


Ingredients

For the walnuts:

  • 1 cup raw walnut pieces
  • 1 tbsp butter
  • 2 tbsp honey
  • Flakey sea salt

For the honey balsamic vinaigrette:

  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp dijon
  • 1 tsp honey
  • Salt + pepper, to taste

For the salad:

  • 5 cups mixed greens
  • 2 baby cucumbers, sliced
  • 1 + 1/2 cups ripe strawberries, sliced
  • 1 avocado, ripe but still firm, diced
  • 1/3 of a red onion, thinly sliced
  • 34 oz feta, crumbled

Instructions

  1. First, make the walnuts. In a small pot or pan, mix walnuts with butter and honey over low heat. Allow to cook for 5 minutes, stirring frequently. Spread walnuts out on a parchment-lined pan and sprinkle with sea salt. Allow to cool for at least 10 minutes.
  2. Meanwhile, make your honey balsamic vinaigrette. In a jar or bowl, mix all ingredients together. Set aside.
  3. Next, prep your salad ingredients. I recommend not tossing salad until ready to serve, and reserving some of each ingredient to sprinkle on top of tossed salad.
  4. Toss everything together when ready to serve. Serve immediately and enjoy!
