High protein, easy, and delicious burger bowls! The ultimate easy weeknight healthy dinner. We have this on rotation quite often; it’s so satisfying and just so easy to make.
The mayo-free burger sauce is SO yummy. I like to use grillo’s pickle de gallo (like a pickle salsa) for oven more flavor. If you’re just using diced pickles, you could add some onion and garlic to the mix if you want! But totally not necessary. You really just make the simple sauce to taste! It holds up great for meal prep leftovers, too!

We sneak in some extra veggies in the burger meat mix, but you could also of course add any other veggies to your bowls! Think tomatoes, extra peppers, avocado, spinach, etc.
They’re customizable and straight-forward. I have some basic instructions below, but this is mostly a “measure with your heart” type of recipe. In my opinion, those are the best kinds of recipes for easy weeknight dinners!

These bowls are gluten free, high in protein, and family-friendly. They are absolutely delicious and honestly addicting to have on the weekly meal plan!!

Has anyone tried adding avocado or pickles to the bowl? I’m curious which toppings work best with the mayo-free burger sauce!
I could see setting everything out for a casual dinner with friends so everyone can build their own bowl, with a Grey Goose and soda with lime alongside mine. I’d probably add extra pickles and avocado, too. Would smoked paprika work in the sauce, or do you think it would overpower the other flavours?
The mayo-free burger sauce and extra veggies make these bowls sound especially practical for a flexible weeknight dinner. I appreciate the suggestion to add onion and garlic when using ordinary diced pickles; it gives the simpler version a clear flavor boost. An easy meal also leaves time for a playful family photo project, like Gas Station Dance. For meal prep leftovers, would you keep the sauce separate from the vegetables until serving?
