Description
High protein ham and cheese biscuits made with cottage cheese!
Ingredients
- 1 cup cottage cheese
- 1/4 cup milk, plus more for brushing tops
- 1 tbsp honey
- 2 tbsp melted salted butter
- 7 oz deli ham, diced in to small pieces
- 1 cup shredded sharp cheddar cheese
- 1/3 cup diced green onion OR chives (or a mix)
- 2 cups bread flour
- 1 TBSP baking powder
- 1/4 tsp baking soda
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper.
- Blend cottage cheese and milk until creamy. In a large bowl, mix with honey and melted butter, then fold in ham, cheese, and green onion.
- In a separate large bowl, mix together all of your dry ingredients. Add to your wet ingredients and mix until just combined- dough will be crumbly and looks slightly dry. That’s OK!
- Turn your dough out onto a clean floured work surface. Use floured hands to combine the dough to make it less crumbly and into more of a smooth dough.
- Roll dough out as much as you can into a rectangle (ish) about 3/4 inch thick. Don’t worry about it being too perfect! Fold one end of the rectangle into the center, and then the other end of the rectangle over it, like a letter.
- Flatten dough again into a more narrow rectangle that is again about 3/4 inch thick. Repeat the process of folding one end into the center and then the other end over it. This is what creates the layers in the biscuits!
- Roll a little once again just to pack layers together more tightly. Cut dough into 6-9 biscuits and place on baking sheet almost touching each other.
- Brush the tops with milk and then bake for 15-30 minutes (depending on size of your biscuits- smaller ones will cook faster), until tops are slightly brown in centers are set. Allow to cool for 10 minutes before enjoying. Optional: brush tops w/ butter + honey!

Look so good. Do you know if they freeze well?
These are so good! I made them with Bobs’s Red Mill Gluten Free 1 to 1 Baking Flour. I had to double the amount of milk, as gluten-free flour tends to soak it up quickly, but left everything else as written. My husband and I are obsessed!

They taste great, should they be refrigerated?
Made these with a mix of chicken sausage links & chicken sausage patties bc I didn’t have ham and used dried chives as well as hot honey in place of regular honey. DELICIOUS! So easy too!!!

I was reading an independent blog review of academic tools when I found a glowing recommendation for this team. I was stuck writing generic, uninspired essays, a depressing losing streak that made my US assignments blend in with the crowd. I hired the ExtraEssay essay writers to tackle a highly controversial ethics prompt that required a bold stance. The explicit promise of zero plagiarism and originality reports attached to every order grabbed my attention immediately. I really enjoyed the creative analogies the writer used to explain complex ethical dilemmas. Scoring the highest grade in my seminar group felt like an absolute masterpiece of a comeback. It proved that taking a risk with a unique argument could pay off spectacularly.
These are delicious! Very moist and lots of flavor. I was pleasantly surprised at how the dough comes together nicely with the rolling and folding. I found that it’s easier to roll the dough into a 6″ x 9″ rectangle, rather than focus on the thickness of the dough. That size rectangle results in six perfect 3″ square biscuits. Maybe it’s my oven, but I found that the biscuits get a bit too brown on top before they’re done, so I cover them loosely with a piece of foil at the 10 minute mark to keep them from burning.
