These deliciously chewy oatmeal cookies are made in partnership with Bob’s Red Mill. My go-to baking product for YEARS now! Bob’s Red Mill has so many amazing product options, and they have been a game changer for me for finding the best gluten free baking products. For these cookies, I used their certified gluten free and organic Old Fashioned Rolled Oats. I also used their 1 to 1 gluten free baking flour, which is always my go-to baking mix for gluten free recipes. All of their products use simple, wholesome ingredients. These oatmeal cookies are perfectly sweet and salty, and loaded with chunks of melty chocolate. The cookies themselves are light and perfectly chewy, too. They are SO delicious with a glass of milk (or almond milk), or a scoop of your favorite ice cream.

The ingredients for the dough are super simple and straight-forward. They are ingredients I always have on hand for easy baking. You can quickly whip up a batch of these to have on hand for a sweet treat made with wholesome ingredients for the week.

You can use any chocolate bar you love- whether it’s milk chocolate, dark chocolate, or semi-sweet. Use whatever you prefer here! I personally love a milk chocolate or semi-sweet chocolate for these cookies.

Ingredients

Scale
  • 2 eggs
  • 10 tbsp unsalted butter, melted
  • 1 cup coconut sugar
  • ¼ cup maple syrup
  • 2 tsp vanilla extract
  • 2 + ½ cups Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
  • 1 + ¼ cup gluten free all-purpose flour (be sure to use a flour that contains xanthan gum)
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 6 oz baking chocolate, chopped
  • Flakey sea salt, for topping

Instructions

  1. Preheat oven to 350°F and line a large baking sheet with parchment paper (you may end up needing 2 baking sheets).
  2. In a large bowl, whisk together the eggs, butter, coconut sugar, maple syrup, and vanilla until smooth.
  3. Stir in the rolled oats, flour, baking soda, and salt. Mix until well-combined. Fold in the chopped chocolate.
  4. Scoop the dough out using a cookie scoop into 18 cookies. Set in refrigerator for 20 minutes.
  5. Gently press each cookie into about ¾” thick and sprinkle with sea salt. Use your figures to pack in the edges of the cookies if needed.
  6. Bake for 11-12 minutes, until some edges are slightly browned. Allow to cool before serving and enjoying!
