Gluten free and dairy free peanut butter and jelly thumbprint cookies! Two of my favorite things combined into one 🙂 Thumbprint cookies are one of my favorite classic cookies, and I will never get sick of the PB+J flavor combo. I wanted to combine these to make the cutest little Valentine’s Day (or any time) treat!

My homemade heart thumbprints are little less than perfect, I’ll admit. But I don’t care because how cute are these?! Other than being an adorable treat to make for someone you love, the flavor is unreal and the soft cookie texture is out of this world. I am in love! I cannot wait for you guys to make these!

These cookies are:

  • Gluten free
  • Dairy free
  • Soy free
  • Flourless

Not only that, but they are SO simple. I actually can’t get over how easy this peanut butter cookie dough is to make- and yes you can make it as just regular peanut butter cookies if you prefer 🙂

All you need for the cookie dough is:

  • Peanut butter (make sure it is runny and has no added oils or sugars!)
  • Egg
  • Coconut sugar (you can sub regular sugar)
  • Vanilla Extract
  • Baking Powder
  • Sea salt

That’s it! No flour needed, and no crazy ingredients. You end up with the most amazingly soft and flavorful peanut butter cookies with just these super simple ingredients!

For the jam thumbprint, a strawberry or raspberry jam works great! I always opt for one that’s sweetened with only fruit if you can find it, just to keep the added sugar levels down. However, feel free to use any jam/jelly that you love!

Tip: if you want to sprinkle these with powdered sugar, you can take a damp paper towel to dab at the heart center afterwards to make sure you can still clearly see the heart!

Flourless Peanut Butter and Jelly Thumbprint Cookies

Gluten free, dairy free, flourless peanut butter and jelly thumbprint cookies!


Ingredients

For the cookie dough

  • 1 cup runny peanut butter
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 cup coconut sugar (can sub regular sugar)
  • 1/4 tsp sea salt
  • 1/8 tsp baking powder

For the thumbprints:

  • 4 tbsp raspberry or strawberry jam

Instructions

  1. Preheat oven to 350°F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together all of the cookie dough ingredients with a sturdy rubber spatula. Be sure everything is well-combined.
  3. Divide the dough into 12 equal portions on the baking sheet, then roll each portion into a smooth ball with clean hands. Line up on your cookie sheet with about 2″ of space between each cookie.
  4. Set cookie dough balls in the freezer to chill for 10 minutes. Don’t skip this step!
  5. Remove cookie dough from freezer. Use your thumb to press diagonally into the center of the cookie, then overlap that thumbprint with another thumbprint in the opposite direction to make a heart (the heart shape is optional; feel free to just do one thumbprint in the center).
  6. Fill each heart with about 1 tsp of jam. Bake the cookies for 8-10 minutes. Allow to completely cool before serving. Cookies will be very soft out of the oven but will continue to set as they cool. Leftovers can be stored in an airtight container for up to 5 days.

    Fabulous! I made these for a birthday party for the birthday girl is gluten free,, and just added 1 thing. I crushed peanuts and after rolling the dough balls I rolled them in the crushed nuts. Great recipe, thank you so much. FYI, I tried a highly rated recipe a while back with the flour and were no where nearly as good as these without!
