This tortellini pasta salad is packed with tons of veggies like peppers, cucumber, and tomatoes. It’s taken to the next level with salami and mini mozzarella pearls, and the best easy homemade vinaigrette. If you know me you know I hate mayonnaise, so you better believe this pasta salad is mayo-free! I kept this one super light and fresh.
I made this recipe for a family dinner at my house, and everyone was obsessed with it! It even made the perfect little meal for the little ones! 🙂 I am so happy with how this pasta salad turned out!
Be sure to use a fresh tortellini for this dish (from the refrigerated section) for the best results. Once the pasta is cooked, the rest just needs to be chopped up and tossed together! Easy, delicious, and perfect for a healthy Summer side dish.
