This one is for my fellow feta lovers! Baked feta sweet potatoes and brussels with hot honey – the best way ever to get your veggies in if you ask me!

This one is simple, straight-forward, delicious, and nourishing. Checks all the boxes!

You simple season your chopped sweet potatoes and brussels sprouts, add your block of feta to the center, and drizzle with some good olive oil.

Then, you’ll bake until the veggies are cooked to perfection and the feta gets nice and melty.

Add your hot honey, pop it back in the oven for a few minutes to get golden browned, mash the feta, mix it in, and enjoy!

Baked Feta Fall Veggies

Description

Baked feta, sweet potatoes, and brussels sprouts!


Ingredients

Scale
  • 3 cups cubed sweet potatoes (this was 1 extra large potato for me)
  • 1 lb brussels, ends trimmed and sliced in half
  • 4 whole cloves of garlic, peeled
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp olive oil
  • 8 oz block of feta
  • 23 tbsp hot honey (sub regular honey if you don’t want it spicy)
  • Optional: red pepper flakes

Instructions

  1. Preheat oven to 425°F. Add your sweet potatoes, brussels, and garlic cloves to a large baking sheet. Toss with the seasonings and olive oil.
  2. Create a space in the center for your feta. Drizzle everything with a little more olive oil.
  3. Bake for 35- 45 minutes, until veggies are cooked to your liking. Remove from oven and drizzle with honey. Return to oven for 5 minutes.
  4. Crush up your garlic cloves and the feta. Gently toss everything then serve and enjoy!
