Lemony Pepperoncini Tuna Salad! Easy, filling, flavorful, and nourishing! Packed with nutrients and ready in minutes for a healthy, high protein and fiber-packed lunch!
This is a “measure with your heart” recipe! Here’s what I add:
Wild tuna White beans Greek yogurt (sub mayo if you’re into it) Dijon mustard Lots of lemon juice + zest Pepperoncinis (you can add some of the juices too) Celery Radish Shallot Dill Olive oil Salt and pepper (season generously!)
Just add and mix until the texture and flavor is to your liking! 🙂
By the way, my favorite way to enjoy this is with crunchy potato chips for a satisfying crunch, plus some crunchy crisp veggies on the side. This tuna salad is SO simple, but SO good!
