My favorite meal prep honey mustard chicken salad! Made without mayo (I’m a mayo hater), full of sweet and savory flavors, and loaded with the perfect crunch from walnuts and apples. Every bite is satisfying, and it makes such a delicious and easy high protein lunch!

  • Crackers (I love an almond flour cracker for more fiber and protein)

  • Crunchy veggies for dipping

This honey mustard chicken salad is one of my favorite recipes to meal prep for the week, or to just whip up on a whim quickly when I have leftover chicken on hand! It’s ready in less than 10 minutes and provides such great protein to keep you full and energized.

It’s creamy and flavorful while still being light, and made totally without mayonnaise. It’s loaded with fresh, nourishing ingredients like apples, celery, walnuts, and Greek yogurt. It’s simple, satisfying, and perfect for a weekday lunch!

No-Mayo Honey Mustard Chicken Salad

Description

Easy meal prep staple honey mustard chicken salad, made without any mayo!


Ingredients

Scale
  • 2 cups shredded rotisserie chicken*
  • ½ cup Plain Greek-style yogurt
  • 3 tbsp grainy dijon mustard
  • 2 tbsp honey
  • ⅓ cup chopped California Walnuts
  • ½ cup diced apple
  • ¼ cup diced red onion
  • ¼ cup diced celery
  • Salt and pepper, to taste

Instructions

  1. Shred your chicken and chop into bite-sized pieces.
  2. In a large bowl, mix together your yogurt, mustard, and honey until smooth.
  3. Add chicken, walnuts, apple, onion, and celery to the bowl. Season well with salt and pepper, then stir everything to combine. Store in the refrigerator in an airtight container for up to 4 days.

Notes

*You could also boil or bake 2 chicken breasts then chop or shred!
