Fluffy, protein-packed cottage cheese biscuits! These jumbo extra fluffy and delicious biscuits are loaded up with a maple beef sausage mixture, cheddar cheese, and green peppers. They are FULL of flavor, and made with simple and wholesome ingredients!

These make an amazing meal prep option for breakfasts on the go, or even as a protein snack between meals! Who needs a protein bar when you’ve got these babies?! The jumbo version of these biscuits have about 20 grams of protein PER biscuit!! They’re satisfying, filling, and easy to make.

They also make an amazing egg-free option, whether you’ve got an egg allergy or just a current egg ick. I feel ya!

High Protein Sausage + Cheese Biscuits

Description

Fluffy high protein sausage, green pepper, and cheese biscuits!


Ingredients

For the sausage (makes extra):

  • 1 lb ground beef
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper

For the biscuits:

  • 1 cup of your cooked beef (about 5 oz)
  • 1 cup cottage cheese
  • 1/4 cup milk, plus more for brushing tops
  • 1 cup shredded cheddar cheese
  • 1/3 cup finely diced green pepper
  • 1 tbsp maple syrup
  • 2 tbsp melted salted butter
  • 2 cups bread flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp sea salt

Instructions

  1. Cook ground beef in a pan with salt, pepper, paprika, garlic, onion, and maple syrup. Set aside.
  2. Preheat oven to 425°F and line a baking sheet with parchment paper.
  3. Blend cottage cheese and milk until creamy. Combine with cheese, cooked ground beef, peppers, maple syrup, and melted butter.
  4. In a separate large bowl, mix together all of your dry ingredients. Add to your wet ingredients until just combined- dough will be crumbly and looks slightly dry. That’s OK! Turn your dough out onto a clean floured work surface. Use floured hands to combine the dough to make it less crumbly and into more of a dough.
  5. Flatten dough out as much as you can into a rectangle about 3/4 inch thick. Don’t worry about it being too perfect! Fold one end of the rectangle into the center, and then the other end of the rectangle over it, like a letter.
  6. Flatten dough again into a more narrow rectangle that is again about 3/4 inch thick. Repeat the process of folding one end into the center and then the other end over it. This is what creates the layers in the biscuits!
  7. Cut dough into 6-9 biscuits (use a knife to cut square biscuits or a biscuit cutter for round ones).
  8. Brush the tops with milk and then bake for 20-27 minutes (depending on size of your biscuits- smaller ones will cook faster), until tops are slightly brown in centers are set. Allow to cool for 10 minutes before enjoying. Optional: brush tops w/ butter + maple syrup!
