This meal could not be easier to make! The only thing you have to chop is the kale- that’s it!! It’s simple, high in protein and fiber, and so cozy. Plus, it makes for the perfect meal for dipping a crusty piece of buttery sourdough into 😉

Vodka Sauce Sausage and White Bean Skillet

Description

Easy one pan vodka sauce, chicken sausage, white bean, and kale skillet!


Ingredients

Scale
  • Oil for the pan
  • 1 lb spicy Italian chicken sausage, casings removed (can sub pork sausage)
  • 23 handfuls of chopped kale
  • 1 jar of cannellini beans, drained and rinsed
  • 2528 oz of vodka sauce
  • Salt + pepper, if needed
  • Optional: burrata for topping

Instructions

  1. Heat a large skillet over medium heat. Drizzle with oil and add your ground sausage. Cook, breaking up, for about 5 minutes until no longer pink.
  2. Stir in your kale and cook for 2 minutes.
  3. Add beans and vodka sauce. Bring to a simmer for 10 minutes.
  4. Optional: top with burrata and serve with bread!

    This recipe was AMAZING! So easy to make, delicious, and both filling + relatively healthy. It is definitely even better with sourdough, but tasted very delicious on its own as well! Just as easy to make as the directions say (and I even hand-ripped the kale instead of chopping, which was even easier), and I’ll definitely be adding it to my rotation.

    i didn’t have any leafy greens on hand so it wasn’t quite as gorgeous as the pictures but it was still so filling, quick and easy. i also subbed shaved parm and asiago cheese because I didn’t have any burrata on hand either — it worked well!

    seems like it has potential to be a “crisper drawer dump” meal — zucchini, spinach, diced carrots etc. would be excellent with it. i plan on eating my way through the recipes and this was a great beginning! cheers 🙂
