Healthier homemade cookies and cream granola! This granola is everything you love about that nostalgic flavor—rich cocoa, sweet creaminess, and a little crunch—reimagined with wholesome ingredients that fuel you! Plus, it has the best big, crunchy granola clusters!
My husband and I LOVE to snack on granola, but store bought can get so expensive, and often has lots of sugar or filler ingredients. I’ve been working on developing some of my own granola recipes, and this cookies and cream version is seriously next level!!
It’s made with a base of hearty oats, packed with healthy fats from hemp seeds, chia seeds, and almonds, and naturally sweetened with maple syrup and coconut sugar. The deep cocoa flavor gives it that classic cookie vibe, and white chocolate chips add that creamy “cream” element, just like the inside of your favorite sandwich cookie.
What I love about this recipe is that it tastes like dessert, but it’s made with fiber-rich, nutrient-dense ingredients that keep you full and energized. It’s perfect for breakfast over yogurt, a mid-afternoon snack, or even as a post-dinner treat with some creamy milk (my personal favorite!).
This is one of those recipes that feels indulgent but is secretly packed with goodness—and it’s totally gluten free if you use certified GF oats.
Here’s what you’ll need:
Olive oil (or coconut oil)
Maple syrup
Coconut sugar
Vanilla extract
Cocoa powder
Old fashioned rolled oats
Unsweetened shredded coconut
Hemp seeds
Slivered almonds
Chia seeds
Sea salt
White chocolate chips

Preheat oven to 325°F and line a large baking sheet with parchment paper.
In a large mixing bowl, whisk together your olive oil, maple syrup, coconut sugar, and vanilla until smooth.
Mix in your remaining dry ingredients BESIDES the white chocolate chips. Stir until everything is evenly coated, then spread out on your baking sheet as evenly as possible.
Bake for 30 minutes. Allow to cool for 30 minutes, then pour your white chocolate chips over the top. Allow to cool another 15-30 minutes until completely cooled, then break into clusters. Store in an airtight container.
