There’s something about a spicy chicken biscuit sandwich that just feels like the ultimate comfort food. My version keeps all of that comfort and flavor, but gives it a little glow-up: more protein, a bit lighter, and still wildly satisfying.

The star of the show is a homemade cottage cheese biscuit that’s magically soft, fluffy, and layered, but secretly packed with protein. Pair that with crispy chicken tenders (we’re using frozen here because convenience is part of balance), and a bright, tangy spicy dill pickle yogurt slaw, and you’ve got a sandwich that hits every craving while still being healthy!

Why this version works

Traditional chicken biscuits are delicious, but they can be pretty heavy. Swapping in cottage cheese adds protein and moisture to the biscuits without extra fuss, and using yogurt in the slaw keeps things creamy while cutting back on richness. The result? A sandwich that still feels indulgent—but won’t leave you needing a nap after.

The Cottage Cheese Biscuits (high-protein & flaky)

These biscuits are surprisingly simple and come together quickly, even if you’re not a seasoned baker (I am certainly not!).

Ingredients:

  • 1 cup cottage cheese
  • 1/4 cup milk, plus more for brushing tops
  • 1 tbsp honey
  • 2 tbsp melted salted butter
  • 2 cups bread flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp sea salt

Instructions:

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Blend cottage cheese and milk until smooth and creamy. Stir in honey and melted butter.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the wet ingredients and mix until just combined. The dough will look crumbly and slightly dry—don’t panic.
  4. Turn the dough onto a floured surface. Use floured hands to gently bring it together into a smoother dough.
  5. Flatten into a rough rectangle about 3/4-inch thick. Fold it like a letter (one side in, then the other over).
  6. Flatten again and repeat the folding process—this is what gives you those beautiful layers.
  7. Cut into 9 biscuits and place them touching on your baking sheet. Brush tops with milk.
  8. Bake for 17–20 minutes, until lightly golden. Let cool for about 10 minutes before serving.

The Spicy Dill Pickle Yogurt Slaw

This is the element that takes the sandwich from good to can’t-stop-thinking-about-it.

Quick mix:

  • Shredded cabbage or slaw mix
  • Plain Greek yogurt
  • Chopped dill pickles
  • A splash of pickle juice
  • Hot sauce (to taste)
  • Fresh dill (if you have it)
  • Salt + pepper

Stir it all together until creamy, tangy, and just a little spicy. I just make this to taste- no measuring needed!

Assembly

  • Bake your favorite frozen chicken tenders until crispy
  • Slice a warm biscuit in half
  • Add a chicken tender (or two for more protein)
  • Pile on the spicy pickle slaw
  • Optional: drizzle with a little extra hot sauce or honey

  11. Meanwhile, make slaw. This is a “measure with your heart” recipe- add yogurt, pickles, hot sauce, and salt and pepper to taste to a bowl, then mix in some slaw mix.
  12. Assemble sandwiches and enjoy!
