Gluten free jalapeño cheddar bagels! No yeast, easy to make, and so delicious!

Ever since creating my first bagel recipe last year, I cannot stop making new flavors! I am obsessed. The dough is easy to make, and I truly have fun making them/rolling out the bagels. I feel like I’m on the Great British Baking Show when I make recipes like this lol. I wish!!

The base of all of my bagel recipes is a blend of almond flour, oat flour, and tapioca starch. This mixture keeps them gluten free, while maintaining a soft and moist texture. Nothing worst than a gluten free version of something that’s dry, crumbly, and flavorless. No thanks!

Gluten Free Jalapeño Cheddar Bagels (no yeast!)

Description

Soft and fluffy gluten free jalapeño cheddar bagels! No yeast required, and made with simple ingredients. 


Ingredients

Scale
  • 1 cup almond flour
  • ¼ cup + 2 tbsp oat flour (plus more for rolling out dough)
  • ¼ cup tapioca starch (or sub arrowroot starch)
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 1 + 1/4 cup plain, unsweetened Greek-style yogurt
  • 1/3 cup pickled jalapeños, roughly diced (more if desired)
  • 1 cup shredded cheddar, divided 

Instructions

  1. In a large bowl, mix together all of the almond flour, oat flour, tapioca starch, baking powder, and sea salt until well combined. 
  2. Fold in the yogurt, 1/2 cup of the cheese, and the diced jalapeños with a rubber spatula until well combined (it may take a minute). Dough will be sticky. 
  3. Allow dough to chill in the refrigerator for 15 minutes.
  4. Preheat oven to 375°F and line a baking sheet with parchment paper.
  5. Clean a work surface and sprinkle with oat flour. Turn the dough out onto the floured surface. Roll and knead the dough into one smooth ball. Sprinkle with more oat flour as needed if dough is still a bit sticky. Divide the dough into 5 equal pieces (or 4 pieces for larger bagels). 
  6. To shape the bagels, roll out each piece of dough into a log, then join the two ends together to form a circle. Be sure not to spread them too thin.
  7. Place bagels on parchment-lined baking sheet and spray each bagel with oil (or brush each bagel with an egg wash). Sprinkle the tops with the remaining cheese. 
  8. Bake for 25-27 minutes, or until tops are slightly golden, then allow to cool for at least 15 minutes before slicing and toasting. Store leftovers in the refrigerator for up to 2 days, or in the freezer for up to 2 months.

    Do you think I could replace the greek yogurt with a dairy free option like almond milk yogurt and get the same consistency? I would also skip the cheddar, I’m thinking about trying this recipe with everything bagel seasoning. Thanks!!

    This is the second week in a row I’ve made this recipe and they are awesome! The dough is always sticky for me but rolling with the oat flour helps. Couldn’t love these more for an easy make-ahead breakfast!

    I made these with regular flour (I am not GF) and they turned out perfect! I also only had regular yogurt, not greek yogurt, on hand and this worked fine as well. So good and will definitely be making again!

    OBSESSED WITH THESE! They are so good and easy to make. The consistency reminds me of a cross between a bagel and a biscuit, which is incredible. So easy to prep for the week too!

    i’m freaking out. THESE ARE INCREDIBLE. ran out of almond flour, so did about a half cup almond and half cup regular flour. they came out totally fine! fluffy, chewy (in a good way), crispy & beautifully golden on top. made one into a tuna sandwich right away…omg. I can’t wait to have another tomorrow!! WOW what a winner.
