Skillet dinners have become my weeknight lifesavers. They’re the kind of recipes that keep dinnertime stress-free while still feeling homemade and nourishing. Once you make this a couple of times, you’ll have it memorized — and trust me, you’ll want to!

Ingredients (Serves 5-6)

  • 3 tbsp butter or olive oil
  • 1 yellow onion, diced
  • 1 to 1.5 lbs chicken breast, diced into bite-sized pieces
  • 1 tsp salt, plus more as needed
  • 1/2 tsp black pepper, more to taste
  • 1 tsp garlic powder
  • 3 cups low sodium vegetable or bone broth
  • 2 cups white jasmine rice
  • ~4 cups broccoli, chopped super small so it cooks evenly
  • 2 cups heavy cream
  • 8 oz sharp white cheddar, shredded or cubed

Instructions

1. Start with the Base

Heat a large skillet or Dutch oven over medium heat. Add butter (or olive oil), then stir in the diced onion and chicken. Season with salt and pepper. Let cook, stirring occasionally, for about 7 minutes, until the chicken is mostly cooked and the onions are softened.

2. Add Rice & Broccoli

Sprinkle in the garlic powder, give it a quick stir, then pour in the broth. Stir in the jasmine rice and finely chopped broccoli. Bring the mixture to a gentle boil, then reduce the heat all the way down to a low simmer. Cover and cook for 15 minutes, stirring once or twice to scrape the bottom of the pan and keep things from sticking.

3. Make it Creamy + Cheesy

Once the rice is tender and the broth is mostly absorbed, keep the heat low and stir in the heavy cream. Add the cheddar cheese one handful at a time, stirring until it’s fully melted and the whole dish is creamy.

Substitutions

  • Want to sneak in more veggies? Stir in baby spinach or riced cauliflower with the cream.
  • No cheddar? Swap in gouda, mozzarella, or a mix of cheeses you love.

  • ~4 cups broccoli diced super small
  • 2 cups heavy cream
  • 8 oz sharp white cheddar, shredded or cubed

Instructions

  1. Heat a large skillet or dutch oven over medium heat. Add butter, onion, and chicken. Season with salt and pepper. Cook, stirring occasionally, for 7 minutes.
  2. Stir in salt, pepper, and garlic powder. Add your broth, rice, and broccoli. Bring mixture to a boil, the reduce all the way to a low simmer and cover for 15 minutes, stirring a couple times to scrape the bottom of the pan.
  3. Keep heat all the way down and stir in heavy cream. Add your cheese one handful at time and mix until fully melted. Serve and enjoy!
