The best Gluten Free Oatmeal Salted Chocolate Chunk Cookies!

- 2 eggs
- 10 tbsp unsalted butter, melted
- 1 cup coconut sugar
- ¼ cup maple syrup
- 2 tsp vanilla extract
- 2 + ½ cups Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
- 1 + ¼ cup gluten free all-purpose flour (be sure to use a flour that contains xanthan gum)
- 1 tsp baking soda
- ½ tsp sea salt
- 6 oz baking chocolate, chopped
- Flakey sea salt, for topping
Instructions
- Preheat oven to 350°F and line a large baking sheet with parchment paper (you may end up needing 2 baking sheets).
- In a large bowl, whisk together the eggs, butter, coconut sugar, maple syrup, and vanilla until smooth.
- Stir in the rolled oats, flour, baking soda, and salt. Mix until well-combined. Fold in the chopped chocolate.
- Scoop the dough out using a cookie scoop into 18 cookies. Set in refrigerator for 20 minutes.
- Gently press each cookie into about ¾” thick and sprinkle with sea salt. Use your figures to pack in the edges of the cookies if needed.
- Bake for 11-12 minutes, until some edges are slightly browned. Allow to cool before serving and enjoying!
