Gluten free banana chocolate chip cake with a simple cream cheese frosting!

Ingredients

Scale

For the cake:

  • 3 ripe and spotty bananas
  • 3 large eggs
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla extract
  • 2 + 1/2 cups almond flour
  • 1/2 cup tapioca starch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 cup chocolate chips

For the cream cheese frosting:

  • 4 oz cream cheese, room temp
  • 2 tbsp butter, room temp
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 + 1/4 cup powdered sugar
  • Pinch of sea salt
  • Milk of choice, as needed

Instructions

  1. Preheat oven to 350°F and line an 8×8 square baking sheet with parchment paper (or generously grease the baking dish).
  2. In a large bowl, mash your bananas. Whisk your eggs, maple syrup, and vanilla in with the bananas until smooth.
  3. Stir in your almond flour, tapioca flour, baking soda, baking powder, and sea salt until a smooth batter forms.
  4. Pour batter into your lined or greased baking dish, then bake for 30-34 minutes until a toothpick comes out clean.
  5. While cake is cooling, you can make your frosting. Beat together the cream cheese, butter, and vailla until smooth. Mix in maple syrup, powdered sugar, and salt. If needed, add milk of choice 1 tsp at a time until smooth and spreadable
