Easy 15 minute Mediterranean pasta salad packed with flavor and veggies!
Ingredients

- 12 oz pasta of choice
- 2 cups arugula
- 1 cup cucumber, peeled and diced
- 1 cup tomatoes, diced (for cherry tomatoes just slice in half)*
- 1/2 cup sliced Kalamata olives
- 1/4 cup thinly sliced shallot (can sub red onion)
- 4–5 oz of feta cheese
- 1/2 cup vinaigrette (use any store bought or homemade dressing you love!)
- Black pepper
Instructions
- Cook pasta according to package directions. Drain and immediately rinse with cold water.
- Add all veggies and the drained pasta to a large mixing bowl. Add feta and vinaigrette and give everything a good stir. Top with fresh cracked black pepper, serve, and enjoy!
Notes
*I used yellow tomatoes for mine, but feel free to use red, yellow, orange, or a mix of all 3!
