Description
Skillet dinner with Italian sausage, potatoes, spinach, peppers, and a simple creamy sauce!

- 2 tbsp olive oil (or butter)
- 1/2 of an onion, diced
- 1 large bell pepper, diced
- 1 lb ground Italian sausage (chicken or pork)
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- Pinch of red pepper flakes
- 1/2 lb baby gold potatoes, quartered
- Salt and pepper, to taste
- 1 cup low sodium veggie or chicken broth
- 1/2 cup heavy cream
- 1 cup baby spinach
- 1/4 cup parmesan, or more to taste
Instructions
- Sauté onions and peppers in olive oil for 4-5 minutes.
- Add Italian sausage; cook, breaking up, until no longer pink. Stir in potatoes, tomato paste, Italian seasoning, red pepper flakes, and salt + pepper. Let cook for 1 minute.
- Pour in broth and heavy cream. Cover pan with lid and simmer for 15-20 minutes, until potatoes are fork-tender.
- Turn off heat and stir in parmesan and baby spinach.
