Creamy butternut squash, spicy Italian chicken sausage, kale, and white bean skillet dinner! we absolutely love a one pan meal around here, and this one is just perfect for Fall/Winter!

This recipe is easy, comforting, packed with protein, fiber, and nutrients, and has SO much flavor. I’m obsessed and I know you guys will be too!

This meal is gluten free, too! It’s made with just a handful of super simple ingredients, and the only real chopping you have to do is for the kale! Super simple and minimal prep for a quick and easy weeknight dinner.

I think this meal is absolute perfection with some toasty buttered sourdough (or any bread) for dipping. It is also delicious on its own, or served over rice!

I used spicy chicken sausage for mine, but you can of course use mild if you prefer it without any spice! You could also easily substitute regular pork Italian chicken sausage!

Butternut Squash Skillet with Italian Chicken Sausage

Description

One pan butternut squash and Italian chicken sausage meal!


Ingredients

Scale
  • 3 tbsp butter
  • 1 lb ground Italian chicken sausage (I used spicy)
  • 3 large handfuls of chopped kale
  • 1/2 tsp dried sage
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup-1 cup of low sodium chicken bone broth
  • 1 jar of creamy butternut squash pasta sauce
  • 1 can butter beans, drained and rinsed
  • 1/4 cup Parmesan cheese

Instructions

  1. Heat a large skillet over medium heat. Add butter and chicken sausage. Cook, breaking up, until cooked through, about 5-7 minutes.
  2. Stir in kale and all of the seasonings. Stir in broth (start with 1/2 cup) and butternut squash sauce. Keep at a low simmer.
  3. Stir in beans and Parmesan. Simmer for 10 minutes. Add more broth as needed, depending on how thick you want the sauce to be. Serve with toasty bread or over rice and enjoy!
