Description
Baked feta, sweet potatoes, and brussels sprouts!
Ingredients

- 3 cups cubed sweet potatoes (this was 1 extra large potato for me)
- 1 lb brussels, ends trimmed and sliced in half
- 4 whole cloves of garlic, peeled
- 1 tsp oregano
- 1/2 tsp paprika
- 1 tsp sea salt
- 1/4 tsp black pepper
- 3 tbsp olive oil
- 8 oz block of feta
- 2–3 tbsp hot honey (sub regular honey if you don’t want it spicy)
- Optional: red pepper flakes
Instructions
- Preheat oven to 425°F. Add your sweet potatoes, brussels, and garlic cloves to a large baking sheet. Toss with the seasonings and olive oil.
- Create a space in the center for your feta. Drizzle everything with a little more olive oil.
- Bake for 35- 45 minutes, until veggies are cooked to your liking. Remove from oven and drizzle with honey. Return to oven for 5 minutes.
- Crush up your garlic cloves and the feta. Gently toss everything then serve and enjoy!
