Quick, simple, high protein Enchilada Skillet! Plus, some good sneaky hidden veggies!

All the delicious flavors of enchiladas, packed into one easy skillet dinner. I absolutely love this meal for something that is satisfying and full of flavor, while still being super nourishing. It’s also so easy to make, making it the perfect quick weeknight healthy dinner!

I love making this with ground beef, but you can also substitute with ground chicken or ground turkey if that’s what you prefer! It can also easily be made gluten free using your favorite gluten free tortillas, or low carb using your favorite low carb tortillas!

I also love that you can easily boost the nutrition of this meal with customizable toppings! I love a big dollop of Greek yogurt for some extra protein, and sliced avocado for some greens and healthy fats. So delish!!

Easy Hidden Veggie Enchilada Skillet

Description

One pan enchilada skillet with cauliflower rice and spinach!


Ingredients

Scale
  • Olive or avocado oil, for the pan
  • 1 (12 oz) bag frozen cauliflower rice
  • 1 lb ground beef (or sub ground chicken or turkey)
  • Seasonings: salt, pepper, garlic powder, onion powder
  • 2 handfuls chopped baby spinach
  • 1 jar of your favorite red enchilada sauce
  • 3 flour tortillas, cut into small strips (for gluten free, sub gluten free tortillas)
  • Mexican blend cheese (1-2 handfuls, measure with your heart!)

Toppings (optional):

  • Plain Greek yogurt or sour cream
  • Avocado
  • Cilantro
  • Hot Sauce

Instructions

  1. Heat a pan with a small splash of oil. Add your cauliflower rice, stirring occasionally.
  2. When cauliflower rice is heated through, add your beef and cook, breaking up, until no longer pink. Season well with salt, pepper, garlic, and onion.
  3. Reduce heat. Add spinach and enchilada sauce. Let simmer for 2 minutes.
  4. Stir in tortilla strips and top with cheese. Cover and let cook for 5 minutes. Remove from heat, serve with desired toppings, and enjoy!

    This was so so good! I didn’t have cauli rice so I used a can of beans but look forward to trying it with cauli. So satisfying.
