The best Summer Salad with strawberries, avocado, feta, and honey salted crunchy walnuts!
Ingredients

For the walnuts:
- 1 cup raw walnut pieces
- 1 tbsp butter
- 2 tbsp honey
- Flakey sea salt
For the honey balsamic vinaigrette:
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 tsp dijon
- 1 tsp honey
- Salt + pepper, to taste
For the salad:
- 5 cups mixed greens
- 2 baby cucumbers, sliced
- 1 + 1/2 cups ripe strawberries, sliced
- 1 avocado, ripe but still firm, diced
- 1/3 of a red onion, thinly sliced
- 3–4 oz feta, crumbled
Instructions
- First, make the walnuts. In a small pot or pan, mix walnuts with butter and honey over low heat. Allow to cook for 5 minutes, stirring frequently. Spread walnuts out on a parchment-lined pan and sprinkle with sea salt. Allow to cool for at least 10 minutes.
- Meanwhile, make your honey balsamic vinaigrette. In a jar or bowl, mix all ingredients together. Set aside.
- Next, prep your salad ingredients. I recommend not tossing salad until ready to serve, and reserving some of each ingredient to sprinkle on top of tossed salad.
- Toss everything together when ready to serve. Serve immediately and enjoy!
