Gluten Free Cinnamon Sugar Donut Bread

Description

Soft and fluffy gluten free cinnamon sugar donut loaf!


Ingredients

Scale
  • 1 egg
  • 1/3 cup unsalted butter, melted
  • 1/3 cup greek yogurt
  • 1 cup milk of choice
  • 2 tsp vanilla extract
  • 2/3 cup granulated sugar
  • 2 cups gluten free all purpose flour (make sure it contains xanthan gum)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

For the cinnamon sugar swirl:

  • 1/3 cup granulated sugar
  • 1 tbsp cinnamon

Instructions

  1. Preheat oven to 350°F and lien a loaf pan with parchment paper.
  2. In a small bowl, mix together the cinnamon sugar swirl ingredients. Set aside.
  3. In a large bowl (can also be done in a blender), mix together all of the wet ingredients until smooth.
  4. Stir in the remaining dry ingredients until combined. Be careful not to over mix!
  5. Pour 1/2 the batter into your lined loaf pan, then top with 1/2 of the cinnamon sugar mix. Top with remaining batter and repeat cinnamon sugar layer. Swirl with a knife.
  6. Bake for 50 minutes-1 hour, until a tooth pick comes out mostly clean. Oven times will vary. Allow to completely cool before slicing.
