Crispy parmesan hasselback potatoes! AKA, the most perfect potato!!

Crispy parmesan on the bottom, with a perfectly cooked sliced potato on the top. Because the potatoes get a hasselback slice, they manage to cook so perfectly and uniformly.

If you’ve never cooked a potato this way, prepare to have your life changed! Dramatic? Yes. But if you are a potato lover like me, you are going to be so obsessed with this recipe!

Prepping your potatoes

The actually slicing of the potatoes is easier than it may look! You just place your potato halves between 2 chopsticks or wood skewers, and carefully slice across the top. Your cuts should be about 1/8″ thick and as uniform as possible. The skewers on either side ensure that your knife does not slice all the way through, keeping the potatoes intact!

While you slice, get your oven preheating so it’s ready to go to avoid your potatoes browning!

Spread some olive oil on your parchment-lined baking sheet in an area roughly the size needed to play all your potatoes down flat (with a little room in between each potato. )Then, you just sprinkle your parmesan mixture onto the olive oil spread onto the center of your baking sheet and place your potatoes flat side down!

What should I serve these potatoes with?

Really any dipping sauce you love, plus a good salad and protein is my preference! For mine, I made a simple lemony yogurt dip and it was SO delicious with the potatoes. I mixed:

  • 1/2 cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • Juice of 1/2 a lemon
  • Salt and pepper, to taste

Crispy parmesan hasselback potatoes!


Ingredients

Scale
  • 4 medium-large gold potatoes
  • 3 tbsp olive oil, divided
  • 2 tbsp butter, melted
  • Salt + Pepper, to taste

For the parmesan mixture

  • 1/2 cup parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp sea salt

For serving

  • Extra parmesan
  • Fresh parsley
  • Dipping sauce of choice

Instructions

  1. Preheat oven to 425°F and line a large baking sheet with parchment paper. Spread 1 tbsp of the olive oil on the parchment paper.
  2. Slice each potato in half length-wise. Line up chopsticks or skewers on the sides of your potato halves, then use a sharp knife to cut 1/8” thick slices, making sure the knife stops at the skewers and doesn’t cut all the way through.
  3. Mix the parmesan with the garlic powder, pepper, and salt. Sprinkle on the center of the greased parchment paper. Lay each potato half on the parmesan.
  4. In a small bowl, mix melted butter with remaining olive oil. Brush each potato with the mixture and season generously with salt and pepper.
  5. Bake for 45-55 minutes, until potatoes are cooked tonl your liking. Allow to set for 5-10 minutes before topping with parmesan and parsley and serving.
