Soft, fluffy, and perfectly sweet sourdough cornbread! Sweetened with honey and made with super simple ingredients. This one is 100% a keeper for those cozy fall and winter months!
I was so happy with how soft and fluffy this cornbread turn out! It’s also perfectly sweet with honey and a bit of unsweetened apple sauce. It’s lower in sugar than many cornbread recipes out there, which I personally prefer!
I made this using my sourdough discard, but it will also work with some active and bubbly starter. Just use what you’ve got on hand ready to go! It has a slight tang of sourdough that I love, without being too overpowering.

1/2 cup sourdough starter (discard or active will work)
1 tbsp apple cider vinegar
1 + 1/4 cup whole milk
1/2 cup honey
1/4 cup unsweetened apple sauce (or sub greek yogurt)
12 tbsp butter, melted
1 + 1/2 cups cornmeal
1 + 1/2 cups bread flour (can sub all purpose flour)
1 tso baking powder
1/2 tsp baking soda
1/2 tsp sea salt
Instructions
Preheat oven to 400°F and grease a square baking pan with butter.
Mix your whole milk with the apple cider vinegar. Allow to sit for 10 minutes, then stir in your melted butter, sourdough discard, and honey.
In a separate bowl, mix together your dry ingredients, then fold them into the wet ingredients.
Pour batter into your greased baking dish. Bake for 30-35 minutes, until top is golden brown and center is set. Allow to cool before slicing and serving.
