Healthier toddler-friendly mini chocolate chip muffins!
Ingredients

- ¼ cup butter, melted
- 2 very ripe bananas, mashed
- 2 eggs
- 1 cup vanilla or plain Greek yogurt
- ¼ cup maple syrup or honey
- ½ tbsp vanilla bean paste or vanilla extract
- 1 + ¼ cup all purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp sea salt
- ¾ cup mini chocolate chips
- Cooking spray
Instructions
- Preheat your oven to 375°F and line a mini muffin baking sheet with cupcake liners. Spray the liners with cooking spray.
- In a large bow, whisk together the melted butter, mashed banana, eggs, yogurt, maple syrup, and vanilla until smooth.
- In a separate bowl, stir the flour, baking powder, baking soda, and salt together, then mix in the wet ingredients until just combined. Fold in about half of the chocolate chips.
- Scoop batter into cupcake liners (batter will make 36 muffins, so you will need to bake in batches). Sprinkle remaining chocolate chips on top.
- Bake for 14-16 minutes, until a toothpick inserted comes out clean. Allow to cool before enjoying.
