Description

Healthier toddler-friendly mini chocolate chip muffins!

Ingredients

Scale
  • ¼ cup butter, melted
  • 2 very ripe bananas, mashed
  • 2 eggs
  • 1 cup vanilla or plain Greek yogurt
  • ¼ cup maple syrup or honey
  • ½ tbsp vanilla bean paste or vanilla extract
  • 1 + ¼ cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ¾ cup mini chocolate chips
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F and line a mini muffin baking sheet with cupcake liners. Spray the liners with cooking spray.
  2. In a large bow, whisk together the melted butter, mashed banana, eggs, yogurt, maple syrup, and vanilla until smooth.
  3. In a separate bowl, stir the flour, baking powder, baking soda, and salt together, then mix in the wet ingredients until just combined. Fold in about half of the chocolate chips.
  4. Scoop batter into cupcake liners (batter will make 36 muffins, so you will need to bake in batches). Sprinkle remaining chocolate chips on top.
  5. Bake for 14-16 minutes, until a toothpick inserted comes out clean. Allow to cool before enjoying.
