Description
Cheesy broccoli and chicken rice, all made in one pan!
Ingredients

- 3 tbsp butter or olive oil
- 1 yellow onion, diced
- 1–1.5 lbs chicken breast, diced into bite-sized pieces
- 1 tsp salt, plus more as needed
- 1/2 tsp black pepper, more as needed
- 1 tsp garlic powder
- 3 cups low sodium vegetable or bone broth
- 2 cups white jasmine rice
- ~4 cups broccoli diced super small
- 2 cups heavy cream
- 8 oz sharp white cheddar, shredded or cubed
Instructions
- Heat a large skillet or dutch oven over medium heat. Add butter, onion, and chicken. Season with salt and pepper. Cook, stirring occasionally, for 7 minutes.
- Stir in salt, pepper, and garlic powder. Add your broth, rice, and broccoli. Bring mixture to a boil, the reduce all the way to a low simmer and cover for 15 minutes, stirring a couple times to scrape the bottom of the pan.
- Keep heat all the way down and stir in heavy cream. Add your cheese one handful at time and mix until fully melted. Serve and enjoy!
