Healthier cookies and cream granola!
Ingredients

- 1/3 cup olive oil (or sub coconut oil, melted)
- 1/3 cup maple syrup
- 1/4 cup coconut sugar
- 2 tsp vanilla extract
- 1/3 cup high quality cocoa powder
- 3 cups old fashioned rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/3 cup hemp seeds
- 1/4 cup slivered almonds
- 3 tbsp chia seeds
- 1 tsp sea salt
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 325°F and line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together your olive oil, maple syrup, coconut sugar, and vanilla until smooth.
- Mix in your remaining dry ingredients BESIDES the white chocolate chips. Stir until everything is evenly coated, then spread out on your baking sheet as evenly as possible.
- Bake for 30 minutes. Allow to cool for 30 minutes, then pour your white chocolate chips over the top. Allow to cool another 15-30 minutes until completely cooled, then break into clusters. Store in an airtight container.
