Gluten free strawberry jam oat crumb bars!
Ingredients

- 1 stick of unsalted butter, melted
- 1/4 cup light brown sugar or coconut sugar
- 1 cup old fashioned oats (gluten free, if needed)
- 2/3 cup almond flour
- 1/3 cup tapioca starch
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup strawberry jam
Instructions
- Preheat oven to 350°F and line an 8×8 baking dish with parchment paper with some hanging over the sides for easy removal.
- In a large bowl, whisk the melted butter and sugar together. Stir in the oats, almond flour, tapioca starch, baking powder, and salt until well combined.
- Press about 2/3 of the mixture into the lined baking dish. Until flat and even. Spread the jam on top, then sprinkle the remaining crumb mixture on top.
- Bake for 30-34 minutes, until crumb topping is golden brown. Allow to cool for 10 minutes, then carefully lift by parchment paper to finish cooling on a wire rack. Once cooled, slice and enjoy!
