Gluten free sweet and spicy sriracha peanut noodles!
Ingredients
Scale
- 8 oz rice noodles
- 1 (12 oz) bag of coleslaw mix
- 1/4 cup bone broth (or veggie broth)
- Protein of choice
For the Sauce:
- 1/2 cup coconut aminos
- 1/3 cup peanut butter
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 2 tsp sriracha
- 2 tsp honey
- 2 tsp fresh ginger
- 2 cloves of garlic, minced
- Salt and pepper, to taste
Instructions
- Cook protein of choice first (I like to bake some tofu in the oven).
- Cook noodles according to package directions.
- While noodles cook, whisk sauce ingredients together. Add sauce to a large pan over medium heat and bring to a simmer. Reduce heat and simmer for 5 minutes, stirring frequently.
- Stir in coleslaw mix, noodles and bone broth to the sauce. Turn off heat and serve with protein of choice and any garnishes you prefer.
