Gluten Free Sriracha Peanut Noodles

Description

Gluten free sweet and spicy sriracha peanut noodles!


Ingredients

Scale
  • 8 oz rice noodles
  • 1 (12 oz) bag of coleslaw mix
  • 1/4 cup bone broth (or veggie broth)
  • Protein of choice

    For the Sauce:

  • 1/2 cup coconut aminos
  • 1/3 cup peanut butter
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp sriracha
  • 2 tsp honey
  • 2 tsp fresh ginger
  • 2 cloves of garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook protein of choice first (I like to bake some tofu in the oven).
  2. Cook noodles according to package directions.
  3. While noodles cook, whisk sauce ingredients together. Add sauce to a large pan over medium heat and bring to a simmer. Reduce heat and simmer for 5 minutes, stirring frequently.
  4. Stir in coleslaw mix, noodles and bone broth to the sauce. Turn off heat and serve with protein of choice and any garnishes you prefer.
