Description

Moist and fluffy cinnamon apple blondies with a delicious maple cream cheese frosting!

Ingredients

Scale
  • 1 + 1/3 cup almond flour
  • 1/3 cup oat flour
  • 1/3 cup tapioca starch (aka tapioca flour)
  • 1/4 cup coconut sugar
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1/4 cup butter, melted and cooled
  • 2 eggs
  • 1/2 cup unsweetened apple sauce
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 apples, peeled and diced into bite-sized pieces (Gala or Honey crisp is best!)

For the maple cream cheese frosting

  • 4 tbsp butter, room temp
  • 4 oz cream cheese, room temp
  • 1/31/2 cup powdered sugar, depending on preferred sweetness
  • 2 tbsp maple syrup
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F and line an 8×8″ pan with parchment paper (tip: spray the loaf pan first to help the parchment lay flatly).
  2. In a large bowl whisk the almond flour, oat flour, tapioca starch, coconut sugar, cinnamon, baking soda and powder, and sea salt.
  3. In a separate bowl, whisk the remaining wet ingredients together, then mix into the dry ingredients until a smooth batter forms. Fold in the peeled and diced apples.
  4. Pour batter into your lined baking pan and bake for 25-30 minutes, or until a toothpick comes out clean. Allow to completely cool before frosting.
  5. While blondies cool, make your frosting by beating all ingredeints together with a hand mixer until smooth. Spread onto cooled blondies, sprinkle with cinnamon, slice and enjoy!
